Clafoutis (kla-fu-tih) are a typical dessert from Limousin, France. The traditional dessert is a cross between a casserole and a cake and is usually made with cherries. Our cherry clafoutis recipe tastes wonderfully fruity and is the perfect treat for the summer.

Ingredients

  • 550 grams of cherries
  • 80 grams of flour
  • 250 ml milk
  • 130 grams of sugar
  • 80 Gramm Butter
  • 4 Owner
  • 1 tbsp vanilla sugar
  • 20 ml Kirschwasser (optional)
  • 1/2 tsp baking powder
  • A pinch of salt

preparation

  • Preheat the oven to 200 degrees and lightly grease a tart pan with 20 grams of butter.
  • Pit the cherries and let them drain completely, otherwise the dough will be too moist.
  • Spread the cherries on the bottom of the tart pan.
  • Melt the remaining butter in a saucepan or in the microwave.
  • Place eggs in a large bowl and beat with a hand mixer for 3-4 minutes until fluffy.
  • Add sugar, vanilla sugar and salt and continue beating.
  • Mix the flour and baking powder in a separate bowl and carefully add to the egg mixture
  • Finally add milk and melted butter and mix everything very briefly with the mixer.
  • Pour the liquid batter over the cherries and carefully place the tart pan in the oven
  • Bake for about 45 minutes and let cool slightly. Be careful not to bake the clafoutis for too long, otherwise they will become rubbery and not taste as good.
