The great thing is that although it sounds complicated, it can actually be prepared quickly and easily. This saves you time for the more complex things and allows you to enjoy the evening with your loved ones instead of spending hours in the kitchen. Just make sure you get the necessary ingredients in good time.

You don't need any hard-to-find ingredients for the dish either. However, since pork is popular for New Year's Eve meals, you should think about getting everything you need in advance. You can also serve it as a side disha fresh salador something delicious made from potatoes (e.g. simple mashed potatoes). The recipe is intended for 4 servings. For a larger group you can double the whole thing.Consider this: If you serve a garnish with it, the number of servings will also increase.

What you need for the pork fillet in puff pastry

For 4 people you need:

  • 110 g black tapenade (olive paste); If you don't like olives, you can use pesto or another type of dip instead
  • 500gMushrooms
  • 1kgBeef fillet
  • 6slicesraw ham
  • 1HEMustard
  • 1Sheet of puff pastry
  • 1egg yolk
  • oil
  • Salt
  • Pfeffer

Preparing the delicious main course for New Year's Eve

  • Roughly chop the mushrooms and blend them into a paste in a blender.
  • Heat some oil in a pan.
  • Fry the mushroom paste in it. Stir occasionally so that the water can evaporate better.
  • After about 10 minutes, remove the pan from the heat, stir in the tapenade and set aside.
  • Heat some oil in a pan again.
  • Sear the pork tenderloin on all sides.
  • Season with pepper and salt.
  • Remove the meat from the heat.
  • Spread it with mustard.
  • Spread a piece of cling film in front of you.
  • Distribute the raw ham on top.
  • Spread everything with the mushroom and olive paste).
  • Place the fillet in the middle and use the foil to wrap the paste and ham around the meat.
  • Wrap it in the foil and let it rest in the freezer for a few minutes.

Preheat the oven to 200 degrees and line a baking tray with baking paper.

  • Roll out the puff pastry.
  • Take the wrapped meat out of the freezer, place it on the dough. In doing so, remove the foil.
  • Wrap the puff pastry around it. If you want, you can prepare a few strips of dough and place them over the roll to create a nice pattern.
  • Brush the dough with egg yolk.
  • Bake the puff pastry roll for 20 minutes at 200 degrees.
  • Reduce the heat to 180 degrees and bake for another 15 minutes.
  • Remove the filled puff pastry from the oven and allow it to cool for at least 10 minutes before cutting and serving.
  • In the meantime you can prepare the side dish.
