But you can also use other types of cherries.
The cherry pancakes can be prepared in different ways. For example, you can bake a classic pancake and top it with the pitted cherries (You can find a few tricks for gutting here) sprinkle. Alternatively, you can put the pancake batter in an oven-safe pan and bake it in the oven. The result is airy, fluffy pancakes that are crispy on the edges and taste wonderful.
Recipe for cherry pancakes with yeast
These delicious cherry pancakes made from yeast dough are the ideal summer breakfast for the whole family. You can use both sour and sweet cherries for this.
Ingredients:
- 250 ml buttermilk
- ½ pack of dry yeast
- 40g sugar
- 125 g Flour
- 1 No
- 20 g Butter
- 200 g sour or sweet cherries
- Powdered sugar for dusting
Preparation:
- Wash and pit the cherries and set aside.
- Warm 100 milliliters of buttermilk. Stir in the yeast and 1 teaspoon of sugar and let rise in a warm place for 15 minutes.
- Add the remaining sugar, flour, salt, egg and remaining buttermilk to the yeast mixture and mix everything into a semi-liquid dough. Let rise for another 45 minutes.
- Heat butter in a pan and pour yeast dough into the pan with a ladle. Scatter the cherries on top, bake for 2 – 3 minutes and turn carefully.
- Put a lid on the pan and bake for another 3 - 4 minutes over medium heat.
- Sprinkle the finished cherry pancakes with powdered sugar.
Tip: You can make this recipe all year round with canned sour cherries!
Cherry pancakes with sweet cherries in the oven
You can also prepare a delicious cherry pancake in the oven. TheRecipe is similar to the French oneClafoutis, however, is not as creamy, but rather looser.
Ingredients:
- 100g cherries
- 2 eggs, size L
- 80 ml milk
- 40 g Flour
- 2 teaspoons sugar
- 1 tablespoon butter
- Powdered sugar for sprinkling
Preparation:
- Preheat the oven to 200°C. Pit the cherries and tear them into coarse pieces.
- In a medium bowl, whisk together eggs and milk.
- In another medium bowl, mix together the flour, sugar and salt.
- Put the butter in an ovenproof pan and let it melt in the oven. Remove from oven and set aside.
- Add the wet ingredients to the dry ingredients and stir. Add cherries.
- Pour the batter into the hot, buttered pan and bake for 20 minutes. Reduce the oven temperature to 180°C and continue baking until the pancake is puffed and well browned, about 15 minutes.
Vegan pancakes with cherries and chocolate chips
Who doesn't like thick American pancakes? The small stacked cakes not only look great, but also taste wonderful. The following recipe offers you a vegan version, which is refined with fresh cherries and delicate chocolate pieces.
Ingredients:
- 100 ml plant milk
- 1 tablespoon apple cider vinegar
- 130 g Flour
- 1 tablespoon baking powder
- 1 pinch of salt
- 2 tablespoons maple syrup, plus more for drizzling
- 1 teaspoon vanilla extract
- 1 tablespoon any vegetable oil, plus more for brushing the pan
- 100 g cherries, pitted and halved
- 20 g Chocolate Chips
Preparation:
- In a measuring cup or small bowl, combine milk and vinegar. Let it sour briefly while you mix the other ingredients.
- In a mixing bowl, mix together the flour, baking powder and salt. Stir in oil, maple syrup, vanilla and soured milk until well combined.
- Fold in the chocolate chips and cherries, stirring only briefly.
- Lightly grease a non-stick pan and place over medium heat. Add pancake batter with a ladle and turn after about a minute when the edges are firm and a few bubbles appear on the surface.
- Stack the pancakes and enjoy with your choice of toppings.
Pancakes with cherries – ideas to refine
Cherry pancake recipes are suitable for both breakfast and dessert. If you decide on such a dessert, you can serve the pancakes with vanilla ice cream or cream.
