preparation:
1. Heat the oil in a large skillet. Season the salmon fillets and fry them in the hot pan over medium heat for 5 minutes on each side. Once cooked, remove from pan and set aside.
2. Melt the butter in the same pan. Add the garlic and sauté until it begins to smell fragrant, about a minute. Sauté onion in butter. Deglaze with the white wine (if you are using it) and let the liquid reduce. Add the sun-dried tomatoes and fry them for 1-2 minutes to release their flavors.
