To prepare our leek salad with apple, you first have to clean and cut the vegetables properly. Cutting leeks can sometimes be quite annoying and that's exactly why we'll explain to you how you can do it quickly and easily.

  • First, use a sharp knife to cut off the root at the end of the leek.
  • Cut off the dry, dark leaves in the same way.
  • Next, cut the leek in half lengthwise, but do not cut it completely.
  • Slightly spread the leeks apart and rinse them under running water.

Ingredients for 4 servings

  • 2 leeks
  • 2 apples, for example Elstar
  • 20 grams of kernels or seeds of your choice (such as sunflower seeds, linseed, etc.)
  • 200 grams of sour cream or low-fat quark for a low-calorie alternative
  • 30 ml freshly squeezed lemon juice
  • 10 grams of Dijon mustard
  • 20 grams of honey
  • Salt and pepper to taste

preparation

  • Wash the leek and apple well and clean the leek as described above.
  • Core and dice the apple and cut the leek into small rings.
  • Roast the seeds in a pan without fat, stirring occasionally, for 2-3 minutes until golden brown.
  • To make the dressing, mix sour cream, mustard, lemon juice and honey in a bowl until smooth and season with salt and pepper.
  • In a large bowl, toss the apple and leek with the dressing and garnish with the toasted seeds.
