This moist, flourless tangerine cake is perhaps one of the easiest recipes you can make in your kitchen, and it tastes even better without the additional ingredient gluten. It goes well with both coffee and dessert and is sure to impress your family or guests.
Flourless tangerine cake recipe
This is a delicious and moist cake with a flavor combination of citrus and almonds, to which you can add amaretto for extra flair and finesse. This step is completely optional, but we wouldn't skip it because, in our opinion, the almond liqueur makes the whole cake!
You need these ingredients:
- 500 g tangerines or clementines
- 3 Owner
- 200g sugar
- 300 g almond flour or finely ground almonds
- 1 tsp baking powder
- 2 THE Amaretto
- Powdered sugar for dusting

Preparation: Prepare the baking pan and mandarin puree
The first thing you should do is prepare your baking pan. To do this, line a 22 cm springform pan with baking paper and lightly grease it. The best way to do this is to place a square piece of paper on the bottom of the mold and then attach the edge of the mold to it. Don't cut the paper - it will help you release the cake.
Now we process the tangerines into a puree. First wash the fruits, then put them whole in a saucepan and cover with cold water. Bring the tangerines to a boil and then simmer for 15 minutes. When the time is up, drain and let the fruit cool.
Cut thosecooked tangerinesinto quarters, remove seeds and place remaining pieces, including pulp and juice, in a food processor or blender. Puree a few times, scraping down the sides as necessary, until the mixture is completely smooth. Set the tangerine puree aside. You need about 350 grams of it.
Next, turn on the oven and preheat it to 180°C.
Prepare and bake the batter
Now the dough is stirred. In a mixing bowl, mix the eggs and sugar with a hand mixer until the mixture is light and creamy. Add the ground almonds, 350 grams of mandarin puree, the baking powder and, if using, the amaretto. Fold in all ingredients with a spatula until everything is well mixed.
Then pour the batter into the prepared baking pan and smooth it out with a spoon or spatula. Place the cake in the oven and bake for 50 minutes to 1 hour, until the top is lightly golden and a toothpick inserted into the center of the cake comes out clean. If the cake browns too quickly, use a piece of aluminum foil to loosely cover it.
Decorate the finished tangerine cake without flour
After removing the cake from the oven, allow it to cool for about 10 minutes before removing the edge of the springform pan and allowing it to cool completely.
To decorate, put some powdered sugar in a fine sieve and dust the cake with it. If desired, you can use a decorative stencil to create an interesting pattern.
Finally, cut the cake into pieces and serve it with afternoon coffee or with a shot of almond liqueur as a dessert after dinner.
