Tangerine sour cream pudding cake with shortcrust pastry
Shortcrust pastry is already in cookiesvery popular. No wonder, because it's not too difficult to prepare, but it has a wonderful aroma. Perfect as a base for the tangerine sour cream cake to make it even better. The pudding is the finishing touch.
For the dough:
- 200 g Flour
- 2 tsp baking powder
- 100 g soft butter
- 80g sugar
- 1 large egg
For the topping:
- 2 Pck. Vanillepudding-Pulver
- 500 ml milk
- 150g sugar
- 600 g sour cream, room temperature
- ½ tsp lemon zest
- 480 g drained canned mandarins (reserve the juice)
- 1 pack of cake icing
Make your own delicious sour cream cake with tangerines
Prepare the puddingAccording to the package instructions for the tangerine sour cream cake, but use half a liter for both packets and 100 g of the sugar. Stir constantly while cooking and do not take your eyes off the pot as the pudding will thicken more quickly than usual. Cover the pudding with foil and set it aside to cool, stirring often to prevent a skin from forming.
In the meantime, knead a dough from the ingredients listed, then shape it into a ball, wrap it in foil and chill it in the fridge for 30 minutes.
Preheat the oven to 180 degrees, grease a springform pan and then dust it with flour. Then take two thirds of the dough out of the fridge and roll it out until it is the size of the springform pan and then place it in the springform pan. Form a long roll from the remaining dough for the tangerine sour cream cake, which you then place along the edge of the springform pan and press up with your fingers to create an edge about 3 cm high.
Mix the sour cream with the remaining sugar and lemon zest, gradually stir in the pudding at room temperature and distribute the resulting cream evenly in the prepared form. Then spread the drained tangerines over it. Bake the cake for 1 hour and then let it cool. Do not remove the springform pan until at least 15 minutes after the end of the baking time.
Then prepare the icing from the tangerine juice, 250 ml water and the cake icing, which you then spread over the cake. You can serve the tangerine sour cream cake straight away, but we recommend chilling it in the fridge overnight or at least for a few hours.
Who likes tin cakes, you can also choose this variant for the sour cream and mandarin cake. The recipe for the tangerine sour cream cake makes around 24 pieces of cake - perfect for an afternoon with the whole family or for a birthday.

- 500 ml milk
- 200g sugar
- 6 cups of sour cream
- 2 large cans of tangerines, drained
Tangerine sour cream cake recipe – this is how it’s done
Knead a dough for the tangerine sour cream cake from the ingredients listed, shape it into a ball and wrap it with foil. Before you use it, let it rest in the fridge for 30 minutes. In the meantime, prepare the filling. To do this, cook a pudding as usual using the milk, sugar and pudding powder according to the package instructions. Put it in a bowl, cover with cling film and let the pudding cool, stirring regularly to prevent a skin from forming.
Preheat the oven to 180 degrees (top and bottom heat) and line a baking tray with baking paper. Flour your work surface and roll out the dough until it fits onto the baking sheet, creating an edge by pulling it up the sides. Now prepare a cream from sour cream and pudding, which you then spread over the dough and top with the drained tangerines. Press it lightly. Bake the tangerine sour cream cake in the tray for about 35 to 45 minutes.
Recipe for sprinkles
How about the tangerine sour cream cakewith sprinklesprepare? You can choose one of the recipes above and then all you have to do is make the sprinkles. And that's easier than you might think. A recipe idea follows.

- 150g sugar
- 125 g Butter
- 1 No
- 2 teaspoons baking powder
- 2 packets of vanilla sugar
Simply process the ingredients into a crumbly mass.
Notice: The amount given should be enough for the sheet cake. For the cake from the springform pan, simply halve the quantities given.Or: Prepare the indicated quantities for the springform pan, use half of the dough as the cake base by crumbling it into the pan and then pressing it down. Then use the other half of the dough as sprinkles.
