Everyone likes pasta, there's no doubt about it. Whether as a side dish or as a main course, a creamy portion of pasta always works and the best thing is that it doesn't take long to prepare. There are two ways to quickly prepare a delicious Parmesan sauce for pasta. You can either make the sauce separately and then add it to the cooked pasta, or the pasta dish afterward“One Pot” Methodprepare, i.e. cook everything together. We have a recipe for every variant.
Make your own creamy garlic parmesan sauce for pasta
If you want to cook the sauce and the pasta separately, then we have the right recipe for you here. You can even prepare the sauce in large quantities and heat it in portions if necessary. This is how it's done:
Ingredients:
- 4 THE BUTTER
- 4 cloves of garlic, finely chopped
- 2 tsp Italian seasoning
- 4 EL MEHL
- 500 ml vegetable broth
- 1 cup of cream
- 200 g Parmesan cheese
- 1 tbsp finely chopped parsley
- kosher salt
- freshly ground pepper
Preparation:
- Heat butter in a high-sided skillet over medium-high heat.
- Once melted and gently sizzling, add garlic and Italian seasoning along with a few pinches of salt and pepper. Cook, stirring frequently, for 1 minute.
- Add the flour to the pan, stir with a whisk, and cook, stirring frequently, for 1 minute.
- Turn the heat to low and slowly stir in the broth, stirring frequently until well combined.
- Bring to a simmer over medium-low heat and simmer over medium-low heat until thickened, about 2 minutes.
- Add cream, grated Parmesan and parsley. Whisk until cheese is melted and sauce is smooth and creamy.
- Cook over low heat, stirring frequently, until desired consistency is reached.
- Season with salt and pepper and serve with your favorite noodles.
Notes on the recipe:
- This sauce is fairly quick to prepare, so it's best to have all the ingredients ready before you start cooking. This way you ensure that nothing burns or overcooks.
- Season moderately throughout the cooking process. This recipe is made with just a handful of simple ingredients, so adding salt and pepper is key to boosting the flavor. Taste the sauce each time you add salt and pepper so you don't overdo it.
- The sauce will thicken quickly once it cools. Keep that in mind as you simmer them. If it doesn't seem very thick, keep in mind that it will get even thicker as it cools. If it seems too thick, simply add a splash of stock or a little more cream to thin it out. If you are cooking the pasta at the same time, you can also dilute the Parmesan sauce with a little pasta water.
One Pot Parmesan Pasta: quick, easy and very tasty
Nobody likes washing the dishes. And admittedly, when making pasta you use too much of it - the pan, the pot, the pasta sieve... With this recipe you can save yourself the unnecessary dishes and prepare everything in one pot or pan. Here are the ingredients and steps for making Creamy One Pot Pasta with Parmesan Sauce.
Ingredients:
- 50 g Parmesan cheese, finely grated
- 3 tablespoons butter, divided
- 4 garlic cloves, minced
- 350 ml chicken stock
- 250 ml milk
- 200 g Capellini pasta (or other pasta of your choice)
- Fresh parsley, for garnish
- Optional spices: ¼ teaspoon each onion powder, oregano, thyme, parsley, pepper.
Preparation:
- Grate the Parmesan and set aside to allow it to come to room temperature.
- Melt two tablespoons of butter in a large skillet over medium heat.
- Add the minced garlic and cook, stirring occasionally, for 1-2 minutes.
- Add the chicken broth and seasonings to taste. Gradually add the milk while stirring. Bring to a boil.
- Add the noodles. You can break them in half to fit better in the pan, or let them heat and turn them into the pan with tongs until they soften and fit.
- Simmer the noodles for 4-5 minutes, stirring occasionally to prevent them from sticking together. Reduce the heat to low.
- Add a tablespoon of butter to the warm pasta and toss to coat.
- Gradually sprinkle in the Parmesan cheese while stirring until a smooth, well-mixed mixture forms. Note: The sauce will be thin at first, but will thicken nicely as you let it stand. The pasta will also soak up the sauce over time.
- Sprinkle with fresh parsley and serve.
Further notes:
- Make sure the liquid is boiling when you add the pasta so that it has the right consistency.
- For really good pasta with Parmesan sauce, buy a block of high-quality cheese. Always grate the Parmesan yourself, then it tastes and melts much better.
- Turn off the heat before adding the cheese because if the base is too hot the milk will separate and you will end up with a grainy consistency instead of a creamy one.
- Do not add the cheese all at once, but gradually. Stir the cheese constantly as you add it.
