Preparation is incredibly easy and lightning fast, making the Peach Cobbler perfect for a spontaneous visit.
Nice and juicy, lukewarm and best accompanied by a scoop of vanilla ice cream – a peach cobbler is the perfect addition to your afternoon coffee! In summer it is best to prepare the treat with fresh peaches. But if you want to enjoy it all year round, you can also use canned peaches.
Ingredients:
- 8-9 medium-sized, ripe peaches
- 50 grams of granulated sugar
- 50 grams of brown sugar
- 1 tbsp cornstarch
- 1 tbsp freshly squeezed lemon juice
- 1/2 tsp cinnamon
- 1 TL Vanilleextrakt
- a pinch of nutmeg
- a pinch of salt
Cookie dough:
- 250 grams of wheat flour
- 50 grams each of granulated sugar and brown sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 120 grams butter, diced
- 120 ml buttermilk
- Break 1 egg with 1 tbsp milk
- Sugar and cinnamon for sprinkling
Preparation:
- Preheat the oven to 180 degrees and grease a baking dish with a little butter.
- Peel the peaches and cut them into bite-sized and not too thin pieces. To make them easier to peel, place them in a pot of boiling water for 30 seconds and then immediately plunge them into ice water.
- Mix the peach pieces with the brown sugar, cinnamon, salt, vanilla extract, lemon juice and nutmeg in a large bowl until well combined.
- Spread the mixture in the baking dish and bake for 10 minutes. Allow to cool at room temperature.
- For the cookie dough, mix wheat flour, baking powder, sugar and salt in a bowl.
- Add butter and work it into the dough with a fork or cookie cutter.
- Gradually add buttermilk, stirring constantly.
- Divide the dough over the peach filling and brush the top with the beaten egg.
- Sprinkle with cinnamon sugar and bake for 45-50 minutes or until golden brown.

- 1 tbsp lemon juice
For the dough:
- 120 grams of wheat flour
- 50 grams of granulated sugar
- 1 tbsp grated orange peel
- 1 tsp baking powder
- 50 grams butter, diced
- a pinch of salt
- 100 ml buttermilk
Preparation:
- Preheat the oven to 180 degrees.
- Whisk together sugar, cinnamon, cardamom and cornstarch in a bowl.
- Add the peaches, berries and lemon juice and mix well.
- Place in a baking dish and bake for 5 minutes. Allow to cool.
- For the dough, mix wheat flour, sugar, orange peel, baking powder and salt. Add butter and work it into the dough with a fork.

- 1 tsp cinnamon
- 1/2 tsp salt
- 110 grams butter, softened
- 200 grams of granulated sugar
- 2 eggs, size L
- 120 ml full fat milk
- 2-3 large peaches, cut into pieces
For the sprinkles:
- 2 tbsp sugar
- 1 tsp wheat flour
- 1/2 tsp cinnamon
- 1 tbsp olive or coconut oil
Preparation:
- Preheat the oven to 180 degrees and grease a muffin tin with cooking spray or a little olive oil.
- Whisk together the wheat flour, baking powder and salt in a small bowl and set aside.
- Mix butter with sugar with a hand mixer for 1 minute. Stir in eggs, vanilla and milk and continue stirring.
- Gradually add the wheat flour, stirring constantly, and stir until a smooth mixture forms.

- 150 grams butter, melted

Preparation:
- Preheat the oven to 180 degrees and grease a baking dish with cooking spray.
- Whisk together the peaches, 50 grams of erythritol, cinnamon and xanthan gum in a medium bowl until well combined.
- Mix 50 grams of almond flour, 50 grams of erythritol, cinnamon and 45 grams of butter in a small bowl until you get a streusel-like dough.
- Mix the remaining almond flour with coconut flour, baking powder, the remaining erythritol, eggs, butter and vanilla extract with a hand mixer.
- Spread the dough in the baking dish, top with the peach mixture and then sprinkle the cinnamon sprinkles over it.
- Cover with aluminum foil and bake for 40 minutes. Remove aluminum foil and bake for another 10 minutes or until golden brown.
