Watermelon Slushies Ingredients for 6 glasses:
- A medium sized watermelon
- 300 ml Prosecco
- 3 fresh mint leaves

Preparation:
- Cut the watermelon and remove the seeds with a teaspoon. Cut the pulp into bite-sized pieces and place in an airtight container.
- Pour Prosecco over the fruit and place, covered, in the freezer for at least 4 hours.
- Place mint, lemon zest and sugar in a small pan with 50 ml water. Bring to a boil, reduce heat and simmer gently for 3-5 minutes or until sugar is completely dissolved.
- Place the frozen watermelon-Prosecco mixture in a blender along with the sugar syrup and mix until smooth.
- Pour into chilled wine or cocktail glasses, garnish with watermelon slices and fresh mint and serve.
