  • 2 large peaches, cut into pieces
  • 3-4 passion fruits, 2 passion fruits cut into pieces, 2 pureed
  • Violets or other edible flowers

Preparation: Preheat the oven to 150 degrees Celsius with circulating air. In the meantime, separate the eggs. It is very important that you separate the egg whites cleanly and that they are at room temperature. Then put it in a clean bowl and beat it with a hand mixer until stiff. Then gradually add the powdered sugar, stirring constantly at medium speed. Then stir the meringue mixture for another 3 minutes at full speed until foamy. At the end, add the cornstarch and white wine vinegar to the meringue mixture and stir in. Pour the meringue mixture into a cake tin and place in the oven. Reduce the heat to 120 degrees Celsius and let the pavlova cake base bake for 1 hour. Then turn off the oven and let the cake base cool for 40 minutes. Put the whipped cream and the pureed passion fruit on the cake and garnish with the peaches and the passion fruit pieces.

Peach yogurt cake with cream

  • 285 g Butter biscuit
  • 6 teaspoons butter, unsalted, melted
  • 2 medium ripe peaches, quartered
  • 4 packs of gelatin
  • 240 ml cold water, divided into two glasses
  • Mix 200 ml yoghurt with 700 g quark
  • once 250 g sugar and another 135 g sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 120 ml whipped cream
  • 2 drops of orange food coloring
  • 160 ml hot water
  • 240 ml Prosecco

Preparation: Grease a springform pan with a diameter of 20 cm.The Butter BiscuitsHalve and chop. This is how the chopping works: First put the cookies in a freezer bag. In the meantime, add 255 g of pureed peaches and the food coloring to the rest of the cream and stir in. Take the cake out of the fridge and spread the second, orange cream layer evenly on top of the first. Refrigerate for another 10 minutes. Now put the remaining 2 packets of gelatine in a bowl along with 120 ml of cold water. Let the gelatine soak for 5 minutes, then put it in the microwave for 30 seconds. Now add hot water, 135 g sugar and Prosecco to the melted gelatine and let it cool at room temperature for 5 minutes. If foam forms on the surface, remove it with a cake server. Cut the remaining peaches into wedges and cover the cake with them. Spread half of the Prosecco gelatine over it and chill the peach yoghurt cake for 30 minutes. Then take the cake out of the fridge and spread the other half of the Prosecco gelatine over the first one. Chill overnight.

Peach Melba cake with jam

For the dough:

  • 350 g butter, soft
  • 300g sugar

  • 50 g butter, unsalted
  • 1 tsp flour
  • 1 sheet of gelatin
  • 750 g Mascarpone

For the cake coating:

  • 100 g butter, unsalted and soft
  • 240 g powdered sugar, sifted
  • 750 g cream cheese, soft
  • 2-3 drops of pink food coloring
  • 2 handfuls of berries for garnish

Preparing self-rising flour:Mix 500 g flour, 1 packet of baking powder, 1/3 teaspoon baking soda and a pinch of salt and sift through. The mixture has a shelf life of six months.

Preparation of the cake:Freeze the berries. Preheat the oven to 160 C and grease a springform pan. Place the butter and sugar in a bowl and mix with a hand blender until thick. Gradually add the eggs and mix with the hand blender. Then first stir in the sour cream, then the vanilla sugar, the self-rising and the corn flour. Divide the dough in two and bake each cake layer for 55 minutes. Then carefully remove it from the springform pan and cut it in half.

Peach jam recipe:Put the sugar, peaches, vanilla sugar and butter in a pan and bring to the boil. Then reduce the heat and simmer for 20 minutes, stirring constantly. Then stir in the flour and simmer for 2-3 minutes. In the meantime, put the gelatine in a bowl and pour cold water over it. Then let the gelatine swell for 5 minutes and add it to the peach mixture. Mix everything well until a uniform mass is formed.

Assemble the cake: Place a cake base on a cake plate and secure it with a cake ring. Pour jam on top and spread some of the berries on top. Add the lemon juice to the tea and sweeten it with the syrup, then refrigerate. Shortly before serving, take the peach iced tea out of the fridge and garnish with the mint leaves.

  • 830 ml coconut milk, cooled
  • 1/2 tsp vanilla sugar

Peach Recipes: Cobbler

The necessary ingredients for the peach cobbler are:

  • 800 g peaches, pitted and cut into pieces
  • 100g butter, salted and melted
  • 400 g self-rising flour (see recipe above)
  • 150g sugar
  • 250 ml milk
  • 1 teaspoon vanilla sugar

Preparation: Mix the flour with the milk, sugar and vanilla sugar in a bowl, but do not knead into a dough. Line or grease a baking pan with baking paper and pour the flour mixture into it. Pour over the melted butter (do not stir) and garnish with the peaches. Bake in an oven preheated to 180 degrees Celsius for 45 minutes until golden brown.

For the dough:

  • 200 g Flour
  • 125 g butter, unsalted
  • 30g sugar
  • 1 large egg yolk

For the cream:

  • 350 ml milk
  • 4 egg yolks
  • 50g brown sugar
  • 15 g Flour
  • 15 g Maismehl
  • 1 teaspoon cinnamon, ground

To garnish:

  • 5-6 ripe peaches
  • 50 g Butter
  • 50g brown sugar
  • 50 ml Sahne

Preparation: Mix all the ingredients for the dough until smooth, adding 1 teaspoon of water if necessary. Roll out the dough on a floured work surface and spread it evenly into a greased tart pan. Let rest for 30 minutes. Preheat the oven to 170 degrees Celsius with fan and bake the tart base for 15 minutes. To make the cream, pour the milk into a deep saucepan and bring it almost to the boil, then remove from the heat and allow to cool. In the meantime, mix the egg yolks with the brown sugar and then stir in the flour, cornmeal and cinnamon. Then add the milk little by little and pour the milk mixture into a clean pot. Combine over medium heat and stir until thickened, 2-3 minutes. Remove from the heat, pour the milk mixture onto the tart base and distribute it evenly. Let cool for 4 hours and then garnish with the peaches and cream. To do this, mix the butter, brown sugar and cream in a deep pan and bring to the boil. Simmer for 1 minute and then let cool for 2-3 minutes. Garnish the peach tart with the fruit and pour over the brown butter cream syrup.

For the peach sheet cake you need the following ingredients:

For the cake:

  • 250g flour divided into two cups of 125g each
  • 1 packet of baking powder
  • 1/2 TL Natron
  • 100 g butter, soft
  • 150g powdered sugar
  • 120 ml yogurt
  • 1 teaspoon vanilla sugar
  • 120 ml milk

To garnish:

  • 60g butter, melted
  • 50g brown sugar
  • 1/4 tsp cinnamon
  • 4-5 ripe peaches, cut into pieces

Preparation: Grease the baking pan with the melted butter. Sprinkle the brown sugar and cinnamon over the butter. Cover the bottom and sides of the baking pan with peach pieces. First mix the dry ingredients for the cake and then mix the liquid ingredients in a separate bowl. Then mix all the ingredients together while stirring constantly and pour the dough into the baking pan. Bake at 180 degrees Celsius for half an hour and then let cool at room temperature.
