Quince Chutney: The best recipe for the popular spicy-spicy sauce!

Ingredients

  • 1 kg of quinces
  • 250 grams of sugar
  • 3 shallots
  • 100 ml white wine vinegar
  • 100 ml apple juice
  • 1 small piece of ginger
  • 2 chili peppers
  • 1 stick cinnamon
  • 1 TL Pfeffer

preparation

  • Wash the quinces under running water and rub off the fuzz.
  • Peel, core and cut the quinces into small pieces.
  • Mix with sugar and salt in a large bowl and let sit for 1 hour.
  • In the meantime, cut the shallots and ginger into small cubes and cut the chili peppers into thin strips.
  • Combine all ingredients with the quinces in a large pot and bring to a boil over medium heat.
  • Reduce heat and simmer for about 20 minutes, stirring occasionally.
  • Remove the cinnamon stick, pour the still hot mixture into clean jars and close tightly.
  • And voilà – your aromatic quince chutney with chili is ready!

Quince chutney from the Thermomix

Like almost any other dish, you could also prepare the quince chutney in the Thermomix.

Ingredients

  • 800 grams of quinces, peeled and cored
  • 1 onion
  • 2 cloves of garlic
  • 1 red pepper
  • 250 ml white wine vinegar
  • 1 tsp ginger powder
  • 1 tsp cinnamon
  • 1 lemon
  • 1 teaspoon each salt and pepper

preparation

  • Cut the quinces, peppers and onions into coarse cubes.
  • Peel the lemon and cut it into small pieces.
  • Put all ingredients in the mixing bowl and cook for 15 minutes/70 degrees/reverse rotation/speed 1.
  • Push down occasionally with the spatula and then cook for 6 minutes/100 degrees/speed 1.
  • Then cook for 2 minutes/100 degrees/counterclockwise/level 1 – the mixture should be slightly chunky.
  • Pour the mixture into hot jars and close tightly.
  • It's that easy to prepare quince chutney in the Thermomix.
