Practical, uncomplicated and delicious – vegetable broth powder is a must in every kitchen and gives our dishes a spicy touch. But instead of buying the ready-made stuff from the supermarket, how about making your own vegetable paste?
Whether with soups, stews ordelicious casseroles– Vegetable broth powder is one of the most commonly used spices in every kitchen. However, if you have ever read the label, then you know that it hardly contains any vegetables, but does contain a lot of palm oil, sugar, aromas and flavor enhancers. We have to explain to you that none of this is particularly healthy. The alternative? Make your own vegetable paste!
In some vegetable broths from the supermarket, the vegetable content is only one percent and everything else is additives. Not particularly good, right? Fortunatelyit's super easyto make our own vegetable paste. The ingredients for this can vary depending on your taste. Only vegetables that contain a lot of water, such as tomatoes or zucchini, would not be a good option as they make the vegetable paste more susceptible to mold. You don't necessarily have to use the quantities we specify - just use what you have and have to go.
Ingredients for 2 glasses of 400 grams each
- 150 grams of celery
- 120 grams of leeks
- 100 grams of onions
- 150 grams of carrots
- 50 grams of shallots
- 5 cloves of garlic
- 100 grams of peppers or mushrooms
- 20 leaves fresh basil
- 2-3 tbsp frozen herbs or other herb mixture of your choice
- 25 ml olive oil
- 125 grams of salt
preparation
- To make vegetable paste yourself, you first have to prepare the vegetables. To do this, clean all vegetables well, peel them if necessary and cut them into bite-sized pieces.
- Wash and chop the herbs.
- Put vegetables and herbs in the blender and chop well.
- Add the salt and stir well.
- Let the mixture steep for 3-4 minutes and then puree everything in the blender to a very fine paste. And voilà – it’s so easy to make your own vegetable paste.
- If you don't want to use a blender but rather a hand blender, you should chop the vegetables very finely.
- Pour into clean jars and close tightly.
Homemade vegetable paste from the Thermomix
Of course, you can make the vegetable paste yourself in the Thermomix even faster and more easily. Here too you can vary the types of vegetables and quantities used.
Ingredients for 2 glasses
- 350 grams of carrots
- 300 grams of celery
- 250 grams of leeks
- 100 grams of onions
- 100 grams of parsley root
- 2 tbsp dried spices of your choice
- 150 grams of salt
- 40 ml olive or sunflower oil
preparation
- Wash, clean and cut vegetables into bite-sized pieces.
- Place the vegetables in the mixing bowl and chop with the spatula for 8 seconds/speed setting 7.
- Push the mixture down with the spatula and chop for a further 5 seconds/speed setting 6.
- Add the salt, spices and oil to the mixing bowl, push down with the spatula and mix for another 5 seconds/speed setting 5.
- Pour into sterilized jars, close tightly and your vegetable paste from the Thermomix is ready!
How to preserve homemade vegetable paste?
In contrast to the finished stuff from the supermarket, our homemade vegetable paste is free of any preservatives or flavor enhancers. And so that your efforts are not in vain, we will explain to you how to preserve the vegetable paste.
Use the right amount of salt
In order to preserve our vegetable paste, the right amount is always crucial. When preparing, you should remember the following rule of thumb: Add around 20 grams of salt for every 100 grams of vegetables. This may sound like too much, but it is particularly important for preserving the vegetable paste.
Sterile preserving jars for filling
Properly stored, homemade vegetable paste will last between 4 and 6 months. To sterilize the preserving jars, boil them, including the clips and rubber rings, in water for about 10 minutes and then let them dry on a kitchen towel. It is also very important that you always keep the vegetable paste in the refrigerator.
Why use vegetable paste?
You already know how to make vegetable paste yourself. Now you may be wondering what you could use these for. The answer to that is pretty simple – whatever you want. Similar to vegetable broth powder, vegetable paste is the perfect base for almost all soup recipes, such as oursGreek tomato feta soup. But the homemade vegetable paste is also perfect for seasoning numerous dishes, such as goulash from the oven or delicious stews. To replace 1 cube of vegetable stock powder with vegetable paste, use about 1-2 tsp. It is also very important that you always use a clean spoon to avoid mold.
