Note that for this fun and original Easter bunny cupcake recipe, the vanilla cupcakes and icing are prepared separately. The ingredients and the preparation steps are also explained.
Ingredients for oneEaster bunny snack:
- 1 Vanilla cupcake
- Approx. 1 Cup Glaze
- 1 white homemade or purchased coconut ball
- 2 Marshmallows
- Desiccated coconut
- 2 pretzel sticks
- 2 pink candies for the eyes
- 1 rosa Geleebonbon
- 4 Mini Marshmallows
- 1 small piece of black lacquer scratch
- 4 pieces of sour fruit gum sticks
For the vanilla cupcakes:
- 2 2/3 cups sugar
- 1 cup unsalted butter in chunks
- 2 large eggs
- 2 egg yolks
- 2/3 cup milk
- 2/3 cup water
- 2 1/2 TL Vanilleextrakt
- 2 2/3 cups flour
- 1 1/3 cups cake flour
- 4 tsp baking powder
- 1/2 tsp salt
For theGlaze:
- 1/4 cup whole milk
- 2 TL Vanilleextrakt
- 10 tbsp unsalted, softened butter
- 5 cups powdered sugar
- Marshmallow Fluff
- 1 pinch of salt
Proper preparation
The Vanilla Cupcakes:
- Preheat oven to 175 degrees. Fill two baking tins for 12 muffins each with muffin paper. To prevent the muffins from sticking if they overflow from the tin, grease the tin additionally. Set aside on baking paper.
- Mix butter and sugar for 2-3 minutes. Scrape the sides occasionally. Gradually add eggs and egg yolks. Also add milk, water and vanilla and continue stirring.
- Mix both types of flour, baking powder and salt together in a medium bowl. Add the flour mixture in three parts to the butter mixture while stirring. Scrape the sides of the bowl every now and then and mix well with the rest. Stir for about 2 minutes.
- Spread the finished dough evenly in the prepared baking pan (approx. 3/4 full). Bake until golden brown, about 18 to 25 minutes, until the dough springs back when pressed. Let them cool and remove from the mold when they are no longer too hot to touch. Allow to cool completely.
The glaze:
- Combine milk and vanilla in a small bowl.
- In another medium bowl, beat butter and sugar with a mixer until fluffy, 5-7 minutes. Scrape down the sides of the bowl occasionally. Stir in the marshmallow fluff and salt at low speed. Add the milk-vanilla mixture. Stir on high for another 1-2 minutes.
- Use the glaze immediately.
Form Easter bunnies
- Spread the cupcakes with icing. Place a coconut ball on each one. Form ears out of the marshmallows and spread some icing on them. Cover with coconut flakes. Use the pretzel sticks to attach the “ears” to the coconut ball.
- Attach the eye candy under the ears using icing. Repeat the same with the nose. Form bunny teeth out of the mini marshmallows.
- Attach the lacquer line over the teeth to form the mouth. The fruit gum sticks form the whiskers by inserting them into the coconut ball.
