Ingredients for 24 mini spring rolls:

  • 24 rice paper sheets
  • 150 grams white cabbage, chopped finely
  • 100 grams carrots, grated
  • 50 grams of green pepper, cut into thin strips
  • 3 pieces of spring onion, cut into thin rings
  • 200 grams of fresh bean sprouts
  • 1 can of bamboo shoots
  • some fresh ginger, chopped finely
  • 2 cloves of garlic, finely chopped
  • 30 ml soy sauce
  • 35 ml sesame oil + 30 ml for deep frying
  • 50 grams glass noodles (optional)
  • 2 egg whites
  • Salt and pepper to taste

Preparation:

  • Place the glass noodles in a bowl and pour boiled water over them. After 3-4 minutes, rinse with cold water and set aside.
  • Heat 35ml sesame oil in a wok or large frying pan over medium heat and fry spring onion and garlic for 1-2 minutes.
  • Add the remaining vegetables to the pan and fry over high heat for 4-5 minutes, stirring constantly.
  • Add soy sauce, salt and pepper and mix well.
  • Remove the pan from the heat and fold in the cooked pasta.
  • Soak the rice paper sheets in water and brush the edges with egg white.
  • Cover with the filling and roll up, folding and pressing the edges.
  • Heat the remaining sesame oil in the pan and heat the spring rolls with vegetables for 2-3 minutes until golden brown.
  • For a lighter and slightly healthier version, you can bake the spring rolls in the oven for 10-15 minutes at 200 degrees.
