Ingredients for 4-6 servings
- 450 grams of beetroot
- 250 grams of tart apple such as Granny Smith or Braeburn
- 60 grams of raw walnuts
- 1/2 bunch fresh mint (optional, but definitely recommended)

- Wash apples, quarter them and remove the core.
- Clean and peel the beetroot thoroughly.
- Next, grate the beetroot and apples coarsely using a coarse kitchen grater. If you don't have a kitchen grater, you can also cut it into very fine strips with a knife.
- Mix the beets and apples in a large salad bowl.
- Season with dressing of your choice (recipe ideas below) and then garnish with mint and walnuts.

- 50 Gram Fresh cream
- The juice and zest of 1 lemon
- 1 teaspoon paprika powder, mild
- Salt and pepper
Feta lemon dressing
Beautifully creamy and super light – this feta lemon dressing is the perfect addition to absolutely any salad!
- 120 grams of Greek yogurt
- 150 grams of feta cheese
- The juice of 1 lemon
- A clove of garlic, finely chopped
- 30 ml olive oil
- Approximately 50 ml of water
- Place all ingredients in a blender and puree for 1-2 minutes until smooth.
