After treating ourselves to a cold beetroot soup, we now crave something warming and filling. Borscht is a spicy and irresistibly delicious soup that is particularly well known in Russia and Eastern Europe. Typically, Russian beetroot soup is made with tender beef, but today we'll show you our best vegetarian borscht recipe. Full of flavor, really delicious and only 300 calories per serving – sounds like the perfect fall dish, right?
Ingredients for 6-8 servings
- 800 grams of beetroot
- 400 grams of potatoes
- 400 grams of white cabbage
- 3 carrots
- 1 stick of leek
- 1 small onion
- 1.3 liters of vegetable broth
- 2 tbsp vegetable oil
- 1 tbsp white wine vinegar
- 2 bay leaves
- 1/2 bunch of fresh dill
- 300 grams of sour cream
- Salt and pepper to taste
preparation
- Peel beetroot, potatoes, carrots, onions and leeks.
- Cut beetroot into sticks, potatoes into cubes, carrots into slices, white cabbage into strips and leek into rings and chop onions finely.
- Heat oil in a large pot over medium heat and sauté beetroot, potatoes, onions and white cabbage for 2-3 minutes.
- Deglaze with vegetable broth, add bay leaves and bring to the boil.
- Reduce the heat and simmer for about 15 minutes.
- Next add carrots and leek and simmer for another 10 minutes.
- Season with white wine vinegar and remove the bay leaves.
- Finally, season the Russian beetroot soup with salt and pepper.
- Divide onto plates and garnish with a little sour cream and voilà – vegetarian borscht is that easy to prepare.
