Stuffed mushrooms with avocado
Stuffed mushrooms should not be missing from any healthy football snack. Fillings like avocado provide healthy fats to keep you going throughout the gamefill up– or at least until halftime.
Ingredients
- 500 g Mushrooms
- 5 tablespoons olive oil
- 3 tablespoons vinegar
- 2 tablespoons chopped red onion
- 1 teaspoon salt
- 1 tablespoon chopped fresh rosemary
- 1 avocado, pitted, peeled and diced
preparation
- Remove the stems from the mushrooms. Place the stems and heads in a small baking dish. Add 3 tablespoons olive oil and toss to combine. After baking (10 – 12 minutes at 200 degrees) let the mushrooms cool down.
- Mix the red onion, salt, and vinegar in a medium bowl. Finely chop the stems and toss them with the vinegar mixture, rosemary, avocado and 2 tablespoons of olive oil.
- Use the avocado mixture to fill the caps. You can also add tomatoes to the avocado mixture if desired.
