All lovers of Italian cuisine know the problem: you have cooked too much spaghetti again. And now? Luckily, you can make a lot with pasta from the day before. Here are several delicious recipe ideas using leftover pasta.

Perfect for the buffet: spaghetti muffins with meatballs

The next recipe is super easy to prepare and tastes delicious. The muffins are also easy to portion - making them the perfect party food or last-minute souvenir.

The preparation is incredibly easy. You will need leftover spaghetti, meatballs and marinara sauce. Preheat the oven to 180° Celsius with circulating air. In the meantime, prepare the meatballs and brush the hollows of the muffin tin with olive oil. Prepare (or heat) the sauce and mix it hot with the pasta. Place the spaghetti in a bowl, twist into nests with a fork and place in the hollows of the muffin tin. Finally the spaghettiGarnish meatballsand bake the whole thing for about 15 to 20 minutes. Remove from oven and garnish with parmesan and parsley.

Lasagna is one of the most popular dishes in Italy. If you don't have pasta plates in the fridge, you can use a little trick and prepare the popular dish in a different way. Today we will explain to you how you can prepare a Blitz variation with leftover spaghetti.

Proceed as follows: First prepare the Bolognese and Béchamel sauces. Then put the spaghetti in a bowl and mix with the Bolognese sauce. Put some oil in a pan and heat it up. Add the minced meat and fry until crumbly. Then divide the spaghetti bolognese mixture into three and layer it in a greased baking dish as follows: First spread the spaghetti, add 1/3 of the minced meat on top and then cover the whole thing with a layer of béchamel. Then comes the second layer and finally finish with the spaghetti with Bolognese. Bake the lasagna in a preheated oven at 180°C for 20 minutes, then remove from the oven and garnish with grated cheese. Bake for another 10 minutes.

Using leftover spaghetti: Fried noodles with vegetables

The next dish is ready in less than 15 minutes. Simply add 1 teaspoon of each of the following ingredients: soy sauce, dark soy sauce, sesame oil, water and sugar to a bowl, add 4 teaspoons of water or vegetable broth and mix well. Place peppers, green onions, pressed garlic clove, grated carrots and portobello mushrooms in a pan and sauté. Add the pasta and pour in the sauce. Mix the whole thing well and serve hot.

Quick and easy: spaghetti frittata

When it comes to using up leftovers, Italians automatically think of frittata. The dish can be prepared quickly and easily.The next lightning recipeis wonderfully diverse and filling at the same time. It's the perfect dinner after a hard day at work.

First, sauté vegetables of your choice. Carrots, red peppers, onions and celery work well. You can also add canned peas and zucchini. First chop the vegetables and steam them for about 8 minutes. Then put the spaghetti in a large bowl and add the vegetables. Mix well. Crack several eggs (one egg per 30 g of spaghetti), add salt, season with pepper and add cream cheese. Then process the whole thing into a homogeneous mass. Put the spaghetti in a pot, heat it up and pour the egg mixture over it. Fry for about 8 minutes at medium temperature and under the lid. Turn over and fry for another 3-4 minutes. Let the finished frittata rest at room temperature for about 10 minutes.

Cold noodle soup with soy milk

The next recipecomes from Asia. The cold soup is made with soy milk and cucumbers. Simply place the spaghetti in a deep plate, fill with soy milk and add several ice cubes to the milk. Cut half a cucumber into sticks and place on the spaghetti along with a hard-boiled egg and a strawberry. Garnish with sesame seeds.

Crispy fritters

A filling dish with pasta from the day before: even beginners can make the next fritters. First you prepare a sauce from canned tomatoes and lentils. Put the tomatoes and lentils in a medium-sized pot, heat them up and stir in 3 teaspoons olive oil, 1 teaspoon sugar, salt and pepper to taste. Simply simmer the sauce over low heat for 15 minutes until it thickens. To make the fritters, whisk eggs into a bowl (you will need about one egg per 30g of pasta), then add cornmeal, crushed garlic cloves and feta cheese. Mix the whole thing well and turn it into nests with a fork. Heat cooking oil in a pan and fry the nests until golden brown. Garnish with the sauce and serve warm.
