How do you make a spare rib marinade?
For delicious, juicy, tender grilled pork ribs, you need to prepare a suitable marinade. You don't need any special knowledge or skills in the kitchen - a good recipe is enough.
A marinade is used to tenderize the meat and give it flavor. In principle, the longer the meat is marinated, the tastier it becomes. That's why you should plan at least a few hours for this.
To marinate pork ribs, spices, herbs, something sour and oil are usually used. Ready-made condiments such as ketchup, mustard and other sauces are often used. The ingredients for the marinade are simply mixed together and the raw meat is marinated in it.
When to marinate spare ribs?
Juicy and aromatic spare ribs cannot be prepared in an hour. In order for the meat to absorb all the flavors of the marinade, it must be marinated for at least 4-5 hours, preferably overnight. So if you have onePlan a barbecue party, it's worth marinating the spare ribs the evening before.
Spare ribs rub or marinade is better?
But what is the difference between a marinade and a rub? A rub or dry marinade is a dry spice mixture that is rubbed onto raw meat to season it. It usually consists of salt, sugar and a mixture of herbs and spices of your choice.
A marinade not only adds flavor to the meat but also tenderizes it, whereas dry rubs do not. Some recipes use both a rub and a marinade, which may be a little more time-consuming, but results in juicy and particularly flavorful grilled food. However, if you have a ready-made rub, you can also use it as a base for marinades or sauces - simply mix it with a little liquid of your choice and you're done.

American spare ribs with Jamie Oliver marinade
DieBarbecue recipes from British celebrity chef Jamie Oliverare still very popular because they are not too complicated. These BBQ pork ribs practically fall off the bone and are coated in a delicious dark rum chili sauce. This is how they are made:
Ingredients:
- Sea salt
- freshly ground black pepper
- 1.5 kg high quality baby back spareribs, silver skin removed
For the marinade:
- 5 tablespoons of maple syrup
- 2 teaspoons chili paste
- 1 tablespoon ground ginger
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons paprika powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon Chinese five-spice powder
- 1/2 teaspoon ground nutmeg
For the rum barbecue sauce:
- 4 cm piece of ginger, peeled
- 3-4 garlic cloves, peeled
- 125 ml Tomato ketchup
- 60 ml dark rum
- 1 tablespoon Worcestershire sauce
- 3 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried chili flakes
- 50g soft dark brown sugar
Mix the marinade ingredients and 2 teaspoons of salt in a bowl. Pat the ribs dry with kitchen paper, place them on a tray and rub them all over with the paste. Cover with cling film and let marinate in the fridge for at least 6 hours, preferably overnight.
Before grilling, remove the ribs from the refrigerator, shake off the excess marinade and let them come to room temperature.
Turn on the grill with half of the bottom covered in charcoals and the other side empty - medium indirect heat is required. Place a drip tray in the grill on the indirect side, cover the grill and let it heat up like an outdoor oven - reaching a temperature of around 180°C.
Stack the ribs on top of each other and wrap tightly with extra-strong aluminum foil. Place the foil packet on the grill over indirect heat, cover with the lid and cook for about 2 hours, or until the meat is tender and beginning to fall away from the bone. Refill the hot coals every 45 minutes.
Meanwhile, finely grate the ginger and garlic in a small pan. Add the remaining BBQ sauce ingredients and 80 ml water. Simmer over medium heat until sauce thickens, stirring occasionally, about 20 minutes. Season to taste and set aside.
Remove the spare ribs from the foil and brush all over with the BBQ sauce and the gravy. Cook over indirect heat with the lid closed for another 30 to 40 minutes until the ribs are tender and golden brown, brushing well with the sauce every 10 minutes. Place the ribs on a board and let them rest for 5 minutes, then cut into them.
Spare ribs marinade with honey
The pork goes hand in hand with a gooey, sweet glaze. Even when marinating spare ribs, you can use various sweeteners such as sugar, honey or maple syrup. This makes the meat sticky on the outside and juicy on the inside. The secret to these recipes is the balance between sweet and salty. Here we give a recipe for delicious ribs marinade with honey.
Ingredients:
- 2 kg peeled ribs without silver skin
- 200 ml tomato sauce
- 150g brown sugar
- 100 ml honey
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon Sriracha sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
Combine all ingredients except the meat in a medium saucepan. Bring to a boil and stir. Reduce the heat to low and simmer the homemade BBQ sauce for 15 minutes.

For the marinade:
- 180 ml chicken stock
- 180 ml soy sauce
- 100g sugar
- 6 tablespoons apple cider vinegar

For the rub:
- 2 teaspoons salt
- 1 teaspoon paprika

Mix the ingredients for the marinade. Place ribs in a shallow baking dish and pour two-thirds of the marinade over them. Turn to coat. Place in the refrigerator overnight, turning occasionally. Cover the remaining marinade and store in the refrigerator.
Drain the marinated ribs, discarding the marinade. Mix sugar, salt and spices for the rub and rub the ribs on both sides.

- 1 kg pork ribs without silver skin

- 500 ml beer

For the marinade:
