Danish Gevulde Speculaas – A delicious cake with almond filling
Who the classicLoves pumpkin pie, will also fall in love with this unique speculoos cake. It is not particularly difficult to prepare, but is nevertheless a real culinary delight that you should definitely try if you want to prepare speculoos recipes.
- 250 g Flour
- 150g dark brown sugar
- 125 g Butter
- 3 tbsp milk
- 1 egg, lightly beaten
- 2 tsp baking powder
- 2 tbsp speculative spice mix
- 375 g Almond paste
- 1 pinch of salt
- Almond halves or leaves to decorate
Preparation:
- Sift the flour, baking powder and salt into a bowl, stir everything together and then add the butter, milk, spice mix and sugar to knead it into a dough, which you then shape into a ball.
- Wrap the dough ball in cling film and place it in the fridge for at least 30 minutes.
- At the end of the cooling time, preheat the oven to 175 degrees and line a baking tray with baking paper.
- Crumble the almond paste in a bowl, add a little more than half of the beaten egg and knead both ingredients.
- Take the dough out of the fridge and divide it into two equal parts. Roll out the pieces into rectangles (approx. 15 cm x 30 cm). If you do this on cling film, they will be easier to transfer to the tray afterwards.
- Place one of the rectangles on the tray and spread the almond paste on it. Leave a margin free.
- Place the other rectangle on top and press the edges together to seal the cake. Brush the top with the remaining egg.
- Decorate with almond halves and bake the cake for 40 to 45 minutes.

The dough should also cover the entire edge. Distribute the filling in it and place the other rolled out half of the dough on top.

- 200 – 250 g crumbled speculoos biscuits
- 115 g mascarpone or cream cheese

- 300 ml cold milk
- 225 g sweet whipped cream (not liquid, but whipped)
Preparation:
- Using a hand mixer, beat the mascarpone, butter and powdered sugar until creamy.
- In a separate bowl, mix the milk and pudding powder together. Stir about 2 minutes or until liquid thickens.
- Add the pudding mixture to the mascarpone cream.
- Now fold in the whipped cream.
- Spread a layer of biscuit crumbs on each glass and some cream on top. Continue alternating until the glass is about 2/3 full.
- Chill the winter desserts at least 4 hours before serving.

- 3 apples, quartered, peeled, cored and thinly sliced
- 2 tbsp brown sugar
- 240 g Flour
- 160 g Butter
- 200g sugar
- 4 Owner
- 2 Tbsp Speculative Spice Mixture
- 2 tsp baking powder
- 1 pinch of salt
Preparation:
- Preheat the oven to 150 degrees and grease a springform pan (20 cm Ø).
- Sprinkle the brown sugar evenly into the mold and spread the apple slices over it. Ideally, these should always overlap a little.
- In a bowl, mix the flour with the baking powder, the spice mixture and the salt.
- In a separate bowl, use a hand mixer to beat the butter and sugar until creamy, then gradually stir in the eggs and the dry ingredients you have just mixed.
- Carefully spread the finished dough into the mold. Be careful not to move the arranged apple slices.
- Bake the speculoos cake for 90 minutes. Check with the toothpick sample.
- Turn the finished cake out while it is still warm. Don't wait until it's cold, otherwise the brown sugar caramel will harden and won't release without the cake falling apart.
