Make the sweet potato ice cream vegan: Recipe for nice cream with vanilla
Sweet potatoes, also as batatasknown, are confusingly similar to potatoes. They are also prepared similarly. But they actually have nothing in common. Because potatoes belong to the nightshade family and sweet potatoes belong to the morning glory family. The latter contain significantly more sugar and starch, but they are approved for diabetics. The reason for this is that the human body produces insulin much more slowly after eating sweet potatoes than when eating potatoes and fruits. They are also real vitamin bombs. They contain vitamins of group B and are also rich in trace elements. For the sweet potato ice cream recipe you not only need sweet potatoes, but also other ingredients. These include healthy fats such as coconut milk and peanut butter, fruits such as bananas and berries and date syrup or agave syrup is used to sweeten it.
Ingredients for 4 servings:
- 400g sweet potatoes
- 400 ml coconut milk
- 150 ml optional soy milk
- 1 pinch of organic bourbon vanilla, ground
- To sweeten: 80 ml maple syrup
- 2 bananas, ripe and medium sized
Preparation:
1. Peel and dice the sweet potatoes. Pour water into a pot and bring to a boil. Add the sweet potatoes and cook until soft. Then remove the pot from the heat, drain the water and let the sweet potatoes cool completely.
2. Place the cooled sweet potato cubes in a container with a lid, dice the bananas and add them. Process the whole thing with the hand blender's hand blender until smooth.
3. Then add the coconut milk, rice syrup, maple syrup and bourbon vanilla and puree until creamy. Close the container or cover with cling film and place in the freezer. Over the next 4 hours, take the ice cream out of the freezer eight times and stir with the hand blender. Then chill overnight. Just before serving, remove from the freezer and enjoy thawed.
Our tip:The ice cream canIf you like, you can also refine it with peanut butter (256 g). Make purple sweet potato ice cream
A few years ago, purple sweet potatoes were considered exotic and were rarely found in German supermarkets and health food stores. They are now available almost everywhere. The purple sweet potatoes are used by amateur chefs to add color to various dishes. There is no difference in taste between the two varieties. Here is a recipe for purple sweet potato ice cream with berries:
Ingredients for 4 servings:
- 400g sweet potatoes
- 400 ml coconut milk
- 150 ml Reissirup
- To sweeten: 80 ml agave syrup
- 1 ripe banana, diced
- 1 handful of berries of your choice
- White chocolate shavings (if desired)
Preparation:
1. Line a baking tray with baking paper, wash, peel and dice the sweet potatoes. Set the oven to 180 degrees Celsius with circulating air. Place the cubes on the baking paper and put them in the oven. Bake for 45 minutes and then let cool. Do not boil or cook the sweet potatoes so that they do not absorb too much water.
2. Puree the baked potato pieces finely with the hand blender and then add the banana, coconut milk, rice syrup and agave syrup. Mix everything until creamy with a hand mixer.
3. Cut the banana into bite-sized cubes and stir into the ice cream mixture with the berries and the white chocolate shavings.
4. Transfer the ice cream to a storage container and cover with cling film. Chill for four hours, removing from the freezer every hour and stirring again with the hand blender.
Prepare sweet potato ice cream in the Thermomix

The necessary ingredients for 4 servings:
- 400g sweet potatoes
- 400 ml coconut milk
- 150 ml Reissirup
- To decorate: coconut blossom sugar, to taste
- 2 ripe bananas, diced
- 1 handful of mango, diced
Preparation:
- Peel and dice the sweet potatoes and cook until soft. Then let it cool for 30 minutes.
- Dice the bananas and add them to the sweet potatoes. Then pour into a container and cover with cling film. Then place in the freezer overnight. The next morning, add the frozen potatoes and bananas to the Thermomix along with the coconut milk, rice syrup and mango pieces and puree at level 10 for about 25 seconds.
- Decorate the ice cream with coconut blossom sugar and serve immediately after preparation.
