Sausage and cheese are undoubtedly the classic, but have you also thought about your vegan guests? And no, we don't mean boring vegetable sticks. In fact, there are plenty of vegan bites that are so delicious that even meat eaters will be licking their fingers afterwards. Whether vegan tofu nuggets, spring rolls or even apple pie for dessert - the following recipes are always a pleasure!
Vegan appetizer recipes: Crispy tofu nuggets
Vegan doesn't mean you're ondelicious snacks and appetizersmust forego. Wonderfully crispy on the outside and incredibly soft and fluffy on the inside - these vegan tofu nuggets are guaranteed to be a hit on your buffet, we promise.
Ingredients:
- 500 Gramm Tofu
Marinade:
- 120ml water
- 30 ml soy sauce, light
- 1 teaspoon each smoked paprika, garlic and onion powder
- 1 tbsp nutritional yeast (optional, but recommended)
Breadcrumb mixture:
- 120 grams of breadcrumbs
- 20 ml olive oil
- 1 teaspoon each paprika and garlic powder
- Salt and pepper
Breading:
- 60 grams of cornstarch
- 240 ml almond milk
- 1 tsp apple cider vinegar
Vegan tofu nuggets preparation:
- Whisk together the marinade ingredients in a medium bowl.
- Cut the tofu into bite-sized pieces and wrap in kitchen paper to squeeze out as much liquid as possible.
- Place in the fridge for 15-20 minutes.
- Preheat the oven to 200 degrees and take 3 shallow bowls.
- Whisk together all the ingredients for the breadcrumb mixture in a bowl. In another bowl, add the cornstarch. In the third bowl, mix the almond milk and apple cider vinegar and let it rest for about 5-10 minutes.
- First roll the tofu pieces in the cornstarch and then dip them in the almond milk. Repeat the process again and then roll in the breadcrumb mixture.
- Repeat the above step with the remaining tofu pieces and then put them in the oven for 20 minutes.
- Turn once and bake for another 15 minutes until golden brown.
- Serve with a vegan dip and your vegan bites are ready!
Simple vegan snacks with puff pastry: mini mushroom tarts
Vegan puff pastry bites are a great option when we want to prepare something delicious in a hurry. Super crispy, creamy and full of flavor – these mini mushroom tarts are always a treat!
Ingredients for the vegan cream cheese:
- 180 Gramm fester Tofu
- 1 garlic clove, finely chopped
- Freshly chopped herbs of your choice
- 1 tsp garlic powder
- 1 tbsp lemon juice
- 1 EL Nährhefe
- A pinch of salt
For the mini tarts:
- Puff pastry
- 160 grams mushrooms, cut into thin slices
- 1 medium onion, chopped finely
- 2 cloves of garlic, finely chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
Preparation:
- Wrap the tofu in kitchen paper and squeeze out the liquid well.
- To make the vegan cream cheese, add the tofu, garlic clove, lemon juice, nutritional yeast and garlic powder to the blender and blend until smooth.
- Stir in fresh herbs and season with salt and pepper. Place in the refrigerator for 15 minutes.
- Heat some olive oil in a pan and fry the onion for 2-3 minutes.
- Add garlic and mushrooms and cook for another 8-9 minutes until mushrooms begin to soften.
- Remove from heat and season with lemon juice, salt and pepper.
- Roll out the puff pastry and cut out 8 even rectangles.
- Place about 1 tablespoon of the mushroom mixture in the center of each rectangle and top with 1 teaspoon of vegan cream cheese.
- To make the vegan puff pastry bites extra crispy, put the tarts in the fridge for around 30-40 minutes.
- Preheat the oven to 200 degrees and bake the mini tarts until golden brown. Enjoy!
Crispy pizza rolls with puff pastry
A party without pizza rolls? We can hardly imagine! The little delicacies are aclassic finger food, which shouldn't be missing from any buffet. And that's why we'll show you how you can prepare pizza rolls as vegan snacks! And the best part? The recipe is super variable and you can add whatever you feel like.
Ingredients:
- Puff pastry
- 30-40 Gramm Marinara-Sauce
- 50 grams of black olives, pitted and cut into small rings
- Other vegetables of your choice (peppers, mushrooms, etc.)
- Optional: vegan cheese or salami
- 1 teaspoon each dried basil or oregano
- Salt and pepper
Preparation:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Roll out the puff pastry.
- Mix the marinara sauce with the spices and spread it over the puff pastry.
- Spread the olives and vegetables on top.
- Add vegan cheese and salami if desired.
- Roll out the puff pastry as tightly as possible and cut it into around 18-20 pieces.
- Bake for 15-20 minutes until golden brown and you have the perfect vegan pizza rolls!
Vegan vegetable bites with quinoa and aioli sauce
Full of flavor, super easy and incredibly delicious – these broccoli bites with quinoa are a great way to pamper your vegan guests.
Ingredients:
- 190 Gramm Quinoa
- 480 ml water, divided
- 200 Gramm Broccoli
- 60 grams of almond flour
- 40 grams of nutritional yeast
- 20 grams of flaxseed flour
- 15 grams of olive oil
- 1 tbsp lemon juice
- 1 teaspoon each smoked paprika and garlic powder
- Salt and pepper to taste
Vegane Aioli-Sauce:
- 80 grams of vegan mayonnaise or vegan yogurt
- 2 EL Sriracha-Sauce
- Salt and pepper to taste
Preparation:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Rinse the quinoa thoroughly with lukewarm water.
- Bring half of the water to a boil.
- Add the quinoa to the pot, bring back to the boil and cook over medium heat for 10-12 minutes.
- Remove from heat and let rest for 5 minutes.
- Steam the broccoli for 3-4 minutes.
- Whisk the remaining water with the flaxseed meal and olive oil in a large bowl and allow to thicken for 10-15 minutes.
- Add all ingredients to the linseed mixture and stir into a smooth dough.
- Then form 20-25 mini meatballs and bake for 25-30 minutes until golden brown.
- Mix the ingredients for the vegan aioli sauce and serve with the broccoli meatballs and voila - your vegan vegetable bites are ready!
Crispy spring rolls from the oven
Would you like to learn Chinese? Then you should definitely try our vegan spring rolls! They taste just as good as the original, but are vegan and baked in the oven.
Ingredients for 10 spring rolls:
- 10 spring roll wrappers
- 1 small onion, diced
- 320 grams mushrooms, diced
- 50 grams of pepper, diced
- 100 grams zucchini, diced
- 200 grams of white cabbage, finely chopped
- 2 cloves of garlic, finely chopped
- 1 tbsp tomato paste
- 1 THE Tamari-Willow
- 1 teaspoon each ground cumin, garlic and onion powder
- 2 tbsp olive oil
- Salt and pepper to taste
Preparation:
- Heat about 1 tablespoon of olive oil in a large skillet over medium heat and add the onion, mushrooms, zucchini and peppers.
- Stir andthe white cabbageadd. Mix well and fry for 4-5 minutes.
- Add the garlic cloves, tomato paste, tamari and spices to the pan and stir. Turn off the heat after 1-2 minutes and allow to cool.
- Preheat the oven to 200 degrees and line the baking tray with baking paper.
- Spread about 2 tablespoons of the filling on the wraps and roll them up.
- Brush the spring rolls with a little oil and bake for 15 minutes.
- Turn over, brush again with oil and bake for another 20 minutes until golden brown.
- Serve and enjoy!
Prepare sweet vegan snacks: mini apple pie
And what should no party be without? A delicious dessert of course! Delicious, healthy and super easy – these vegan mini apple cakes are guaranteed to be a feast for the taste buds!
Ingredients for vegan shortcrust pastry:
- 350 grams of wheat flour
- 30 grams of granulated sugar
- 220 grams vegan butter
- 30 ml cold water
- A pinch of salt
Filling:
- 320 grams apples, peeled and cut into small cubes
- 50 grams of brown sugar
- 30 grams vanilla pudding powder
- 1 tsp cinnamon
Preparation:
- To make the vegan shortcrust pastry, mix the flour, sugar and salt in a large bowl.
- Dice the butter and add it.
- Work the butter into the flour with your hands and gradually add the water.
- Knead until a dough forms.
- Form into a flat ball, wrap in cling film and place in the fridge for 30-40 minutes.
- Preheat the oven to 180 grams and lightly grease a 12-cup muffin tin or small tartlet cases.
- Mix all the ingredients for the filling well in a bowl.
- Roll out the shortcrust pastry and cut out 12 circles.
- Place the circles in the muffin tins and press firmly.
- Pour the filling into the molds.
- Cut the remaining dough into thin strips and place on top.
- Bake for 25 minutes until golden brown and enjoy!
