In fact, the Swedish department store sells more than 1 billion Köttbullar a year and the little meatballs have had a permanent place on the menu for several years. Almost everyone has eaten them at least once and if not, then you're really missing out! The classic meatballs usually consist of beef mixed with veal or pork. Recipe for vegan Kötbullar with chickpeas
The original recipe for the Swedish meatballs first appeared in a cookbook from 1754 and thanks to “Ikea”, Köttbullar are now also extremely popular in Germany. Vegan Köttbullar have been offered in all Ikea restaurants since August 2020. However, if you would rather make these yourself at home, then you should definitely try our recipe for vegan Köttbullar with chickpeas! And with only 360 calories per serving, this dish is great for a healthy onevegan dinnersuitable!
Ingredients for 2 servings:
- 300 grams mushrooms, roughly chopped
- 2 shallots, diced
- 2 cloves of garlic, finely chopped
- 250 grams of canned chickpeas
- 120 grams of breadcrumbs or ground oat flakes
- 1/2 bunch of parsley
- 2 tbsp soy sauce
- 1 tsp ground cumin
- 1/2 teaspoon each salt and pepper
Mashed potatoes:
- 250 grams of floury potatoes
- 50 ml Hafermilch
- 1/2 cube of vegetable broth
- 1 TL vegane Butter
- Salt and pepper
- A pinch of nutmeg
Cranberry sauce:
- 50 grams of cranberry jelly
- 1 sprig of fresh parsley
Vegan cream sauce:
- 20 grams of vegan butter
- 20 grams of wheat flour
- about 150 ml vegetable broth
- 120 ml vegetable cream
- 1 tsp tomato paste
- 1 tbsp soy sauce
- 1 Price Nutmeg
- Salt and pepper
Make vegan Köttbullar yourself:
- Mash the chickpeas with a fork and add the parsley. Mix well.
- Add the remaining ingredients for the Köttbullar and mix everything together well.
- Place the mixture in the refrigerator for 15 minutes.
- Heat some olive oil in a pan over medium heat.
- Form small balls and fry vigorously on all sides.
Vegan mashed potatoes:
- Bring a pot of salted water to the boil.
- Peel the potatoes, chop them into small pieces and cook them for about 30 minutes until they are soft.
- Mash with a potato masher and then season with plant-based milk, vegan butter and spices.
Vegan cream sauce:
- Melt the vegan butter in a small saucepan and add the flour, stirring constantly. Mix everything until smooth.
- Add vegetable broth and vegetable cream, stirring constantly, and simmer for 1 minute.
- Add the remaining ingredients, reduce the heat and simmer for 10-15 minutes. Stir well every now and then.
- If the sauce becomes too thick, add some vegetable stock.
- Serve the vegan Köttbullar with mashed potatoes, cream sauce and cranberry jelly and sprinkle with fresh parsley!
Delicious Köttbullar with vegan minced meat
For the ultimate enjoyment, you can of course use vegan mince to prepare Köttbullar. The little meatballs taste just like the original and no one will notice the difference - believe us.
Ingredients for 6 servings:
- 460 grams of vegan minced meat
- 1 small onion, chopped finely
- 1 garlic clove, finely chopped
- 60 grams of breadcrumbs
- 2 tbsp coconut milk
- 1 tsp nutritional yeast
- 1 teaspoon each of onion and garlic powder
- 30 ml olive oil
- Salt and pepper
Preparation:
- Place vegan minced meat, onions, garlic cloves and breadcrumbs in a large bowl.
- Add the coconut milk and let the mixture sit undisturbed for 2-3 minutes.
- Add nutritional yeast and spices and mix well.
- Form small meatballs and heat olive oil in a large skillet.
- Fry the Köttbullar for about 1-2 minutes per side.
- Serve with vegan sauce and mashed potatoes or pasta and enjoy!
Recipe for vegan Köttbullar with kidney beans
Kidney beans are often used in vegan cuisine as a meat substitute and it is therefore no surprise that they are ideal for preparing vegan köttbullar.
Ingredients for 4 servings:
- 2 cans of kidney beans
- 45 grams of ground oat flakes or oat flour
- 140 grams of bulgur, cooked
- 1 tbsp mustard, medium hot
- 1 teaspoon soy or tamari sauce
- 1 tsp white wine vinegar
- 1 tsp baking powder
- 1 EL Nährhefe
- 2 tbsp tomato paste
- 30 Grams Tahini
- 60ml water
- 1 tbsp flaxseed flour
- 1 teaspoon each of onion and garlic powder, oregano and rosemary
- 1/2 teaspoon each of turmeric and sage
Preparation:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Place oat flakes, kidney beans, flax seeds, tomato paste, water and baking powder in a blender and puree.
- Now add all the remaining ingredients except the bulgur and mix everything until smooth.
- Add bulgur and mix well.
- Form small balls and spread them on the baking tray.
- Bake for 30 minutes, remove from oven and let cool for another 10 minutes.
- Serve with cream sauce and potatoes.
Vegan Meatballs with Tofu
Although tofu is not for everyone, these vegan köttbullar taste simply excellent.
Ingredients for 6 servings:
- 400 Gramm Tofu
- 150 grams of breadcrumbs
- 100 grams of oat flakes
- 1 medium onion, diced
- 50 ml soy sauce
- 20 grams mustard, medium hot
- 1 tsp nutritional yeast
- 30 ml water
- 1 tbsp smoked paprika
- 1 teaspoon each oregano and thyme
- Salt and pepper
Preparation:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Put the oatmeal and water in a bowl and let it steep for 5 minutes.
- Press the tofu dry, crumble it with your hands and add it to the oat flakes.
- Then add the remaining ingredients and mix everything into a homogeneous mass.
- Form small meatballs and put them in the oven.
- Turn after 10 minutes and bake for another 15 minutes.
- Serve with any side dishes you wish and enjoy!
