  • 1 tbsp Turmeric
  • 1/2 TL Cardamom
  • 1/2 cinnamon
  • 1 tbsp thyme, freshly chopped
  • 1 TL Curry powder
  • 1 1/2 tsp sea salt
  • 100 g cashew nuts, roasted
  • 50 g coconut flakes, toasted
  • some chopped coriander to garnish

Put the lentils and broth in a pot and bring everything to the boil. Add curry, turmeric and thyme. Simmer over low heat for 20 minutes. Fry the onion in coconut oil. Then add the lemongrass and the remaining spices and fry briefly. Add the onion and coconut milk to the lentils and bring to the boil again. Stir in lemon juice, serve and garnish with coconut flakes, cashews and fresh coriander.

  • Cup of shiitake mushrooms, sliced

  • 900 ml vegetable broth
  • 120 ml white wine
