Ingredients for about 45 pieces

  • 200 grams of powdered sugar
  • 350 grams of ground almonds
  • 20 grams of apricot or orange jam
  • 1 tbsp orange juice
  • 30 ml water
  • 2 tbsp cinnamon

Glaze:

  • 100 grams of powdered sugar
  • 1-2 tbsp water

  • Put all the ingredients for the dough in a large bowl and knead with your hands to form a smooth dough.
  • Form the dough into a large ball, wrap it in cling film and place it in the fridge for at least 1 hour.
  • Roll out the dough on a floured work surface between 2 layers of baking paper. If the dough is too sticky and cannot be rolled out, add some ground almonds.
  • Dip the cookie cutters lightly in water and cut out stars.
  • Let the cookies dry at room temperature for about 3 hours.
  • Preheat the oven to 130 degrees and line a baking tray with baking paper.
  • Bake the vegan cinnamon stars for 15 minutes.
  • In the meantime, for the glaze, stir the icing sugar and water until smooth and brush over the cooled cookies.
  • And done!

The best vegan cinnamon stars with aquafaba

Ingredients

  • 200 grams of ground almonds
  • 150 grams of powdered sugar
  • 6 tbsp aquafaba (approximately 70 ml)
  • 1 tsp baking powder
  • 1 tsp lemon juice
  • 1 tbsp cinnamon

preparation

  • Mix ground almonds, 80 grams of powdered sugar, lemon juice, cinnamon and a pinch of salt in a large bowl.
  • 4 and baking powder in a large bowl and beat with a hand mixer for 3-5 minutes until stiff.
  • Knead the vegan egg whites into the almond mixture, mix well and place, covered, in the refrigerator for at least 1 hour.
  • Roll out the dough between 2 layers of baking paper and cut out about 35 stars.
  • Preheat the oven to 200 degrees and line a baking tray with baking paper.
  • Bake the cookies for about 8 minutes and let them cool completely.
  • Beat the remaining aquafaba until semi-stiff with a hand mixer and add the remaining powdered sugar.
  • Brush the cookies with it and let them dry for another hour.
  • And voilà – your vegan cinnamon stars with aquafaba are ready.

Healthy Christmas cookies without sugar

  • For the glaze, melt the cocoa butter and stir with the cashew butter and maple syrup until smooth.
  • Brush the vegan cinnamon stars with it and let them dry.
