  • 500 g puff pastry (2 sheets of puff pastry)
  • 100 g green pesto, homemade or store-bought, drain off excess oil
  • 50g mozzarella or another melting cheese such as cheddar
  • 100 – 150 g cherry tomatoes (15 – 16 tomatoes)
  • 15g melted butter or vegan butter/coconut oil

  1. Carefully roll out the puff pastry sheets into rectangles. A Christmas tree shape is cut out of a sheet of dough. In the middle of the ground there is a small rectangle (about 5 cm long) - the tree stump. Instead of doing this by hand, you can also use a clean ruler to make sure everything is perfectly aligned. Another option is to use baking paper as a cutting aid after you have drawn and cut out the tree pattern.
  2. To get a straight line, place the first Christmas tree on a second sheet of dough. You can also use the odd leftover dough. You can also fill them and then shape them into bite-sized pastries.
  3. Preheat the oven to 200 degrees with the fan on.
  4. Spread a thin layer of pesto on one of the puff pastry sheets that look like Christmas trees and sprinkle the grated cheese on top. Make sure to leave a margin of about 1 cm. Cover the first sheet of puff pastry with the second. If you press the edges lightly you can seal them a little.
  5. Use a knife or pizza cutter to make cuts 4-5cm apart on each side of the tree. Be sure to leave the top 2 inches of the tree uncut. Again, use a ruler to make sure the cuts are horizontal and straight. Then rotate each “branch” once.
  6. Once the puff pastry Christmas tree is twisted, brush it with the melted butter and then place a slice of cherry tomato on each branch.
  7. Bake the puff pastry Christmas tree until golden and fluffy, about 15 to 18 minutes. Then take it out of the oven, let it cool and you can serve this delicacy!

  • 110g brown sugar

  • 60g melted butter

  1. Preheat the oven to 200 degrees. Place a piece of baking paper on a large baking sheet.
  2. In a microwave or saucepan, melt the butter (60 g) and then let it cool slightly.
  3. In the next step, roll out the puff pastry on a floured surface or on baking paper.
  4. Spread the two tablespoons of butter evenly over the pastry sheet and sprinkle the pastry with cinnamon and brown sugar - you can also spread Nutella on the pastry.
  5. Roll out the second sheet of puff pastry and carefully place it on top.
  6. Using a sharp knife or pizza cutter, cut the dough into 1-inch strips. Ten strips are required.
  7. Take a strip and carefully fold it in the shape of an accordion, like a Christmas tree. Start at the base of the tree and thread a wooden skewer through each layer until it ends at the top. Proceed in the same way with the other strips of dough. You can use a small cookie cutter to form miniature stars from the leftover dough.
  8. Brush the trees with melted butter and bake for 12-15 minutes, or until golden. The stars you make will take about 8 to 10 minutes to bake well. If you want, you can finish by dusting the trees with powdered sugar.
