It doesn’t matter whether it’s a vegan Christmas cookie or a low-calorie oneWeight Watchers cookies– Gingerbread is part of our standard repertoire at Christmas time. Beautifully juicy, aromatic and Christmassy – these vegan gingerbreads are addictive!
Ingredients for 8 pieces:
- 400 grams of ground hazelnuts or almonds
- 30 grams applesauce, unsweetened
- 160 grams of maple syrup
- 100 grams of dried apricots
- 50 ml vegetable oil
- The grated peel of 2 oranges
- 1 tbsp gingerbread spice
- 8 pieces of wafers
- 150 grams of dark chocolate
Preparation:
- First pour hot water over the dried apricots and let them stand for 10-15 minutes.
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- For the gingerbread, mix the ground nuts, applesauce, maple syrup, oil, orange peel and gingerbread spice in a large bowl and knead with your hands.
- Drain the apricots, pat dry and cut into small pieces. Add to the dough and knead everything well again.
- If the dough is too dry, add 1-2 tablespoons of applesauce.
- Form 8 equally sized balls and press them onto the wafers.
- Bake the vegan gingerbread cookies for 10-12 minutes and let them cool slightly.
- Cover the gingerbread with the melted chocolate and let it harden for 1 hour.

Ingredients for approx. 20 pieces:
- 130 grams of wheat or spelled flour
- 70 grams of ground almonds
- 10 grams of cornstarch
- 110 grams vegan butter or margarine, cut into pieces
- 50 grams of powdered sugar + more for dusting
- 1 tbsp Vanilla extract
- A pinch of salt
Preparation:
- Whisk together flour, cornstarch, powdered sugar and salt in a bowl.
- Add vanilla extract and butter and knead everything into a dough using either your hands or the dough hook of the mixer.
- Form the dough into a large roll and cut into 2 halves.
- Wrap the dough rolls in cling film and place in the fridge for 1 hour.
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- Cut pieces about 1 cm wide from the dough rolls and then shape them into classic vanilla crescents.
- Bake the vegan vanilla crescents for 10-12 minutes or until the ends are lightly browned.
- Allow to cool completely and dust with plenty of powdered sugar.

- 60 grams of powdered sugar
- 1 tbsp lemon juice
- 30 ml water
- 1 tbsp cinnamon
- A pinch of salt
Vegan frosting:
- 60 grams of powdered sugar
- 1-2 tbsp water
Preparation:
- Put all the ingredients for the vegan cinnamon stars in a large bowl and knead into a sticky dough with your hands or the dough hook of the mixer.
- Form the dough into a large disc, wrap it in cling film and put it in the fridge for 1-2 hours.
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Roll out the dough to about 0.5-0.6 cm thick and cut out small stars.
- Leave for 6-8 minutes and cool completely.
- Mix the icing ingredients in a bowl to form a thick paste and spread it over the cookies.
- Allow to harden and your vegan cinnamon stars are ready to eat.

- Roll out the dough to a thickness of approx. 3 mm and cut out circles with a cookie cutter.
- Using a smaller cookie cutter, cut out hearts in the middle of half of the cookies.
- Bake the cookies for 8-10 minutes and allow to cool completely.
- Heat the jam briefly in the microwave or in a pot.
- Then spread the jam all over the cookies and place a cookie with a heart on top.
- Fill the hearts with jam and put them in the fridge for 1 hour.
- Sprinkle vegan rascals with powdered sugar and enjoy.

Ingredients:
- 160 grams of wheat flour
- 200 grams of granulated sugar
- 80 grams coconut oil, melted
- 40 grams of cocoa powder
- 80 ml almond milk
- 1 tbsp ground flaxseed
- 1 TL Vanilleextrakt
- 1 tsp baking powder
- Powdered sugar for dusting
Preparation:
- Preheat the oven to 180 degrees and line a baking tray with baking paper.
- Mix the sugar and coconut oil well in a bowl with a whisk.
- Add ground flax seeds, almond milk and vanilla extract and stir.
- Add flour, cocoa powder and baking powder and mix to form a smooth dough.
- Form 18 small balls and roll them in powdered sugar – the more, the better!
- Allow the vegan crinkle cookies to cool completely for 10-12 minutes.
