  • 600 grams of watermelon, without peel
  • 200 ml canned coconut milk
  • 200 ml Sahne
  • 70 grams of honey or maple syrup
  • 1 TL Vanilleextrakt
  • 1 tsp cornstarch
  • A pinch of salt

  • Cut the watermelon into small pieces and either juice it in a juicer or puree it with a hand blender.
  • Put the coconut milk and cornstarch in a bowl and mix well.
  • Place cream, honey, vanilla and salt in a small saucepan and heat over low heat for 1-2 minutes.
  • Add coconut milk and simmer for 1 minute, stirring constantly.
  • Add the watermelon juice to the cream mixture and mix well.
  • Pour the mixture into the ice cream maker and let the ice cream maker do its work. After about 20 minutes you will get a “soft ice cream texture”.
