Ingredients (for 4 servings):

  • 500 ml watermelon juice (approx. 600 g watermelon pulp, seeded and diced)
  • 30 g cornstarch
  • 40g sugar
  • ground cinnamon
  • ground cloves
  • Vanilla
  • a handful of pistachios (unsalted)
  • 2-3 pieces of dark chocolate
  • a handful of jasmine flowers or jasmine essence (optional)

Puree the watermelon and pass the pulp through a fine-mesh sieve. Alternatively, you can use a juicer. Set aside briefly.

Optional: For a special aroma, soak the jasmine flowers in some of the juice for about 1 hour, then discard the flowers.

Add the cornstarch to a small or medium saucepan, then very graduallythe watermelon juiceadd and stir to incorporate. Do not add too much juice at once to avoid lumps.

Add the sugar, a little cinnamon, clove powder, vanilla and 1 drop of jasmine essence and stir well until the sugar is dissolved.

Then place the pot over medium heat and bring to a boil. Reduce the heat and cook for about 15 minutes, stirring frequently.

Pour into 4 small glasses, allow to cool completely and refrigerate for a few hours or overnight.

Serve the watermelon dessert cold in a glass with a small pinch of cinnamon, a few chopped pistachios, grated dark chocolate and more jasmine flowers for decoration.

Ingredients for 10-12 small glasses:

For the watermelon syrup:

  • 100g sugar
  • 125ml water
  • 1/2 cup watermelon puree
  • 1 leaf of mint

For the panna cotta:

  • 1/2 cup watermelon syrup
  • 500 ml whipped cream
  • 30g sugar
  • 2 tablespoons gelatin
  • Pink food coloring (optional)
  • Watermelon extract (optional)

To make the syrup, combine the water, sugar, watermelon puree and mint leaf in a small saucepan and cook over medium heat for 20-30 minutes until the sugar has dissolved and the consistency thickens. Remove from heat. Remove the mint leaf and set the syrup aside to cool.

Prepare the gelatin in a small bowl and set aside.

Combine cream, sugar and cooled watermelon syrup in a saucepan. Bring the mixture to a boil over medium heat and then remove from the heat.

Stir in the melted gelatine, stirring constantly. Add food coloring and watermelon extract if a darker color and stronger watermelon flavor is preferred.

Pour the mixture into the jars and place them in the refrigerator for 4-6 hours.

Cut the watermelon into cubes, place on top of the panna cotta and serve.

Watermelon chia pudding in a glass

Ingredients for 6-8 glasses:

  • The pulp of 1/2 watermelon, deseeded and pureed in a blender (approx. 1 liter of watermelon juice)
  • 200 g Chia-Samen
