  • 400 g Brussels sprouts, chopped into small pieces
  • 1 head of romaine lettuce
  • 40 g Pecorino-Käse
  • a handful of dried cranberries
  • a handful of smoked almonds
  • 1/2 tsp salt
  • 1/4 TL Pfeffer

Preparation:

  1. Place olive oil, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl and stir well.
  2. Place the Brussels sprouts in a large bowl and season with the lemon juice. Chill and let rest in the refrigerator for an hour.
  3. Shortly before serving, remove the Brussels sprouts from the refrigerator and mix with the cheese, smoked almonds, cranberries and romaine lettuce.

  • 64g whipped cream
  • 128g horseradish
  • Salt to taste

  • Herb mix of 1 tbsp oregano, 1 tbsp parsley, 1 tbsp thyme, 1 tbsp rosemary

Preparation:

  1. Remove the prime rib from the refrigerator and let it stand at room temperature for 30 minutes.
  2. Put the olive oil with the mixed herbs, pepper, pressed garlic and salt in a small bowl and mix well. Spread the herb mixture over the meat and rub it in.
  3. Preheat the oven to 230° with fan or 200° without fan. Place the prime rib bone-side down in a baking tray and bake for 20 minutes. Then reduce the temperature and braise the meat for 90 minutes at 180° Celsius. When the meat thermometer reads 60 degrees, remove the prime rib from the oven, cover with baking foil and let rest at room temperature for 15 minutes.
  4. In the meantime, mix the sour cream with the whipped cream, add the grated horseradish and season with salt and pepper. Serve the sauce with the prime rib roast.

  • 45 ml white rum
  • 45 ml pineapple juice, unsweetened
