- 1/2 teaspoon each dried oregano and paprika powder
- Salt and pepper to taste
Preparation:
- Preheat the oven to 180 degrees and spray a 12-cup muffin tin with cooking spray.
- Using a round cookie cutter with a diameter of 10-12 centimeters, cut small circles out of the tortillas.
- Line each cavity of the muffin tin with a tortilla circle.
- Whisk the eggs with the sour cream in a bowl and add half of the cheese.
- Chop the vegetables finely and add them to the mixture. Mix everything together well.
- Season with the spices and fill into the muffin tins.
- Sprinkle remaining cheese on top and bake for 12-13 minutes or until golden brown.

- 6 wheat tortillas
- 200 grams of cream cheese, soft
- 50 grams whipped cream (optional)
- 20 Gramm Butter
- 80 grams of blackberry jam
- 120 grams of fresh blackberries
- 2 tbsp grated lemon peel
- 1 tbsp Vanilla extract
Preparation:
- Place cream cheese, whipped cream, jam, lemon zest and vanilla extract in a bowl and whisk together.
- Melt the butter in a pan over medium heat and fry the tortillas for 1-2 minutes per side.
- Heat fresh blackberries in the microwave for 2-3 minutes.
- Top tortillas with the cream cheese filling and fresh blackberries.
- If desired, garnish with a little more lemon peel and enjoy!

- 200 grams of canned sweetcorn
- 300 grams cheddar, grated
- 2 tbsp olive oil
- Salt and pepper to taste
- For topping: Fresh cilantro, red onion, spring onion and/or avocado
Preparation:
- Preheat the oven to 200 degrees and spray a baking dish with cooking spray.
- Heat olive oil in a pan over medium heat.
- Add the onion and pepper to the pan and sauté for 6-7 minutes.
- Add kidney beans, sweetcorn, chicken, chilies and half of the enchilada sauce and stir well.
- Spread the remaining enchilada sauce in the baking dish and top with 8 tortilla halves.
- Spread evenly with about 1/3 of the chicken mixture, followed by 1/3 of the grated cheddar.
- Repeat the process 2 more times and cover the baking dish with aluminum foil.
- Bake for 20 minutes, remove aluminum foil and bake for another 10 minutes until cheese is completely melted.
- Remove from the oven and garnish with toppings of your choice. Enjoy!

- Salt and pepper to taste
Preparation:
- Heat olive oil in a skillet over medium heat and saute beef for 4-5 minutes until fully cooked.

- 450 grams of firm tofu, drained and cut into pieces
- 1 medium onion, diced
- 1 red pepper, diced
- 1 can of black beans
- 2 small jalapenos
- 430 grams frozen spinach, thawed and pressed dry
- 570 Gramm Enchilada-Sauce
- 2 tbsp olive oil
- 1/2 teaspoon each of turmeric and paprika powder
- 20 grams nutritional yeast (optional)
- Salt and pepper to taste
Preparation:
- Preheat the oven to 180 degrees and spray a large baking dish with cooking spray.
- For the filling, put the tofu in the blender and puree for 2-3 minutes.
- Season with spices and puree again briefly.
- Heat olive oil in a large skillet over medium-high heat.
- Add the jalapeño, bell pepper and onion and sauté for 5-6 minutes.
- Add tofu and nutritional yeast and cook for 5 minutes, stirring constantly. The mixture should look like scrambled eggs.
- Stir in the beans and thawed spinach, season with salt and pepper and cook for 2-3 minutes.
- Spread the baking dish with a thin layer of enchilada sauce.
- Soften the tortillas in the microwave for 15-20 seconds.

- 1 medium onion
- 2 cloves of garlic
- 1 red pepper, diced
- 70 grams of salsa or tomato sauce of your choice
- The juice of 1 lime
- 2 THE Avocado-Öl
- 20 Gramm Butter
- 100 grams of cheddar cheese
- Salt and pepper to taste
Preparation:
- Whisk eggs in a large bowl and set aside.
- Heat avocado oil in a large skillet over medium heat and fry the tortilla strips until crispy, 2-3 minutes per side.
- Remove from pan and set aside.
- Melt the butter in the pan and fry the onion, garlic cloves and peppers for 2-3 minutes.
- Add the tortilla strips, eggs, tomatoes, salsa and lime juice to the pan and mix everything well.
- Cook for 3-4 minutes, stirring constantly, or until eggs are set.
- Turn off the heat and sprinkle the cheese on top.
- If desired, garnish with a little avocado or a little more salsa and serve warm.

- 10 grams butter, melted

Filling:
- 3 large Granny Smith apples
- 30 Gramm Butter
- 10 grams of sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
Preparation:
- Preheat the oven to 200 degrees.
- Mix cinnamon and sugar in a bowl.
- Brush the tortillas with the melted butter and sprinkle with the cinnamon sugar.
- Cut the tortillas into 4 pieces and place 2 pieces each in a muffin tin so that they slightly overlap each other.
- Bake for 8-10 minutes until golden brown and allow to cool slightly.
- In the meantime prepare the filling. To do this, peel the apples, core them and cut them into small pieces.
- Heat all filling ingredients in a small saucepan over medium heat and sauté for 3-5 minutes, stirring constantly.
- Fill the muffins 3/4 full with the apple filling and garnish with a little whipped cream or caramel sauce if desired.
