Ingredients
- 220 g Allzweckmehl
- 1 tsp baking powder
- 1/2 TL Natron
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 120 ml vegetable oil
- 100g sugar
- 70g brown sugar
- 2 large eggs
- 2 TL Vanilleextrakt
- 30 ml milk
- 190 g grated Zucchini
preparation
- Preheat the oven to 220°C.
- Spray a muffin tin (12 pieces) evenly with non-stick spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a medium bowl, add the oil, sugar, brown sugar, eggs, vanilla extract and milk and mix well.
- Then stir in the grated zucchini and add the wet ingredients to the dry.
- Stir everything together with a whisk until well combined.
- Pour the batter into the molds and fill them to the top.
- Bake the zucchini muffins at 220°C for 5 minutes and reduce the temperature to 180°C. Then bake for another 15 minutes or until a toothpick comes out clean.
- Allow muffins to cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
