- 350 g zucchini (about 1-2 medium ones)
- 125 ml vegetable oil plus extra for greasing the mold

- 1 tsp baking powder
- ½ TL Natron
- ½ tsp sea salt
For the lemon glaze:
- 80g powdered sugar
- 1 tbsp lemon juice

Preparation:
- Preheat the oven to 180°C/160°C fan. Grease a loaf tin and line it with baking paper.
- Roughly grate the unpeeled, raw zucchini (using a food processor or a kitchen grater). Gently squeeze the rasps in a clean tea towel to remove some moisture.
- In a large bowl, whisk together the oil, eggs, sugar, lemon zest and juice until smooth, then stir in the zucchini. Sift in the flour, baking soda, baking powder and salt and fold in carefully.
- Pour the batter into the prepared pan and bake for 75 minutes, or until a skewer comes out clean. Allow to cool completely in the tin.
- For the lemon glaze:Mix the lemon juice and powdered sugar until smooth. Drizzle over the cooled cake and sprinkle with the lemon zest.

- 220 ml vegetable oil
- 400 g granulated sugar
- 2 large eggs
- 120 ml buttermilk
- 2 TL Vanilleextrakt
- 1 1/2 tsp cinnamon
- 250 g Flour
- 1/2 tsp baking powder
- 1/2 TL Backsoda
- 1 pinch of salt
- 250 g grated Zucchini
- 100 g finely chopped walnuts
For the glaze:
- 230 g cream cheese, very soft
- 80g unsalted butter, softened
- 360g powdered sugar
- Zitronensaft ca. 1 THE
Instructions:
- Preheat the oven to 180°C. Grease a tray with oil.
- In a large mixing bowl, whisk together the oil, sugar, eggs, buttermilk, vanilla and cinnamon until smooth.
- Mix the flour, baking powder, baking soda and salt and add to the bowl. Mix until everything is well mixed. Fold in the zucchini and nuts.
- Pour the batter into the prepared pan and bake for about 40 minutes, or until a toothpick comes out without any wet batter sticking (soggy crumbs are fine).
- Allow the cake to cool completely before frosting.
- For the glaze: Beat the cream cheese and butter until fluffy. Add the lemon juice and sugar, one cup at a time while beating. Scrape down the sides of the bowl if necessary. If the icing is too thin, add more sugar; if it is too thick, add a little more lemon juice or milk.
- Brush the cooled cake with the glaze and enjoy.
Juicy zucchini chocolate cake from the tray

Preparation:
- Preheat the oven to 190 degrees. Grease the baking tray well.
- In a large bowl, stir together the sugar and yogurt until fluffy. Add the eggs, whisking after each addition.
- Sift flour, cocoa powder, baking powder, baking soda and salt into a separate bowl.
- Mix the dry ingredients with the sugar-yoghurt mixture and then slowly pour in the milk.
- Fold in the zucchini and vanilla and pour the batter into the prepared baking pan.
- Bake for 25 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Glaze:Mix butter, cocoa and milk in a saucepan over medium heat.
- Heat to boiling point, stirring frequently.
- Remove from heat and stir in the powdered sugar and vanilla until the glaze is smooth (you may need to whisk it).
- Pour the warm glaze over the cake as soon as you remove it from the oven. Allow to cool completely before serving.
