The ingredients for this recipe are so simple that you probably already have most of them in your kitchen.

  • 1 tsp olive oil
  • 1 TL Butter
  • 2 large onions
  • 1 puff pastry
  • 100 g grated cheese (Cheddar, Gruyére or Gouda)
  • 2 tbsp grated Parmesan
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tbsp finely chopped fresh chives

Prepare onion cake with caramelized onions

  • First, cut the onions into thin slices.
  • Place the butter and olive oil in a large skillet and heat over medium heat.
  • Wait for the butter to melt and add the onions.
  • Let them cook for 7-8 minutes, stirring occasionally, until translucent.
  • Season with salt and pepper and cook over low heat for another 30 minutes until tenderand caramelized. If all the liquid has evaporated during cooking, add 1 tablespoon of water at a time.
  • Preheat the oven to 200°C.
  • Lightly flour the work surface, roll out the puff pastry into a rectangle and carefully place it on a baking tray lined with baking paper.
  • Fold in 1cm from the outside of the dough and press lightly to form the edge. Then prick the middle part of the puff pastry with a fork.
  • Spread the cheese and Parmesan evenly over the pastry sheet and then arrange the onions on top. Sprinkle the chopped chives on top.
  • Bake the pie for 20-23 minutes, until the pastry crust is lightly browned and the cheese is melted.
  • Remove the onion tart from the oven and let it cool for about 5 minutes.
  • Serve warm or at room temperature.

Useful tips

If you are making the onion tart with frozen puff pastry, take the time to let it thaw in the fridge overnight and keep it there until ready to use, as you want it to be cold and processed quickly.

If you prefer a crispy center, bake the puff pastry for 6-7 minutes before adding the filling.

You can combine different cheeses like Cheddar, Gruyére, goat cheese, or Gouda, and even use blue cheese or Gorgonzola for a bolder flavor.

If you want to refine the cake a little, add figs, goat cheese and walnuts. You will love the sweet and savory taste.
