Recipe for a heavenly zebra cheesecake with fruit kick

Ingredients for approx. 16 pieces:

  • 200 g Mehl
  • 230 g of sugar
  • Salt
  • 100 g Butter
  • 7 Owner (m)
  • 250 g blackberries
  • 40 g cornstarch
  • 1 tablespoon of lemon juice
  • 500 g of lean curd
  • 250 g Ricotta
  • 250 g of whipped cream
  • 2 tablespoons of blackberry fruit spread (without pieces and kernels)

Preparation:

1. Knell flour, 100 g of sugar, 1 pinch of salt, butter and 1 egg to the smooth dough. Place in a greased springform pan (26 cm Ø), press into a flat floor and chill.

2. Wash the blackberries, set 50 g aside to decorate, puree the rest. Mix with 30 g of sugar, starch and lemon juice. Mix the curd, ricotta and 100 g of sugar. Mix in 100 g of cream and 6 eggs one after the other.

Mix the half of the cheese mass with the pureed blackberries. Put approx. 3 tablespoons of light cheese mass in the middle of the shape. Put 3 tablespoons of blackberry mass on top. Alternately continue until everything is used up.

4. In the preheated oven (electric stove: 160 ° C, circulating air: 140 ° C, gas: level 1), place an ovenproof bowl with hot water on the floor. Put the springform pan into the oven and bake for about 45 minutes. Then let the oven cool down and let the cake cool for about 30 minutes when the door was closed. Remove and let cool.

5. Beat the remaining 150 g of cream until stiff. Fill in a piping bag with a star nozzle and spray on the cake in tuffs. Mix the fruit spread until smooth. Decorate the cake with the other 50 g blackberries and spread.
