Fairy Kisses Recipe: Heavenly Cookies with Toffifee

Would you like a change from vanilla crescents, cinnamon stars and the like? Then try these heavenly fairy kisses!

What do I particularly love about Christmas time? Well, the many homemade cookies, of course! Not only do they taste delicious, many also have really funny or magical names. Like oursfor example, or do you already know these delicate ones?

Fairy kisses definitely fall into the “unusual name” category. Unfortunately, I can't reveal where exactly the name comes from. But I can think of it. Because the cookies with shortcrust pastry, toffee and meringue topping are just as sweet and airy as a delicate kiss from a mythical creature. Oh, doesn't that sound fantastic? The recipe is here.

Cookie recipe: This is how fairy kisses work

Ingredients for 25 pieces:

  • 25 Toffifee

For the dough

  • 120 g Flour
  • 40g powdered sugar
  • 70 g kalte Butter
  • 1 egg yolk
  • 1 pinch of salt

For the meringue topping

  • 2 egg whites
  • 140g powdered sugar
  • 1 pinch of salt

Preparation:

1. First we prepare the cookie base. To do this, mix the flour, powdered sugar and salt in a bowl. Then add the egg yolk and cold butter in small pieces. Knead everything quickly into a smooth dough. Form this into a roll that is slightly wider in diameter than a toffee. Wrap in cling film and leave to rest in the fridge for about 1 hour.

2. Then preheat the oven to 160 degrees fan. Line a baking tray with baking paper.

3. On a lightly floured work surface, cut the rolling pin into thin slices. Place these on the tray and place a toffee upside down on top of each.

4. To make the meringue, beat the cleanly separated egg whites with the salt for around 5 minutes until stiff (There is a well-rated hand mixer on Amazon here*). At the end, carefully sprinkle in the powdered sugar. Continue beating until a stiff egg white forms.

5. Pour the egg whites into a piping bag and completely cover the toffee on the dough with it. Bake the cookies for about 20 minutes until the meringue is set. Then let it cool completely.
