Crunchy, sweet and simply delicious: with these tips, your homemade roasted almonds will taste like they were fresh from the Christmas market.
How that smells! In addition to the many sparkling lights, we especially love all the delicious smells that we encounter at the Christmas market. But what we look forward to most every year is the roasted almond stand. Love – and sugar – is in the air here.
For a real Christmas market feeling in your own four walls, you can easily make roasted almonds yourself. All you need are just a few ingredients – and a little muscle strength in your arms. But trust us, this sweet treat is worth all the stirring.

Easily make roasted almonds yourself
We like our roasted almonds the classic way with a pinch of cinnamon and vanilla sugar. But you can also refine them according to your taste. Try it with gingerbread spice instead of cinnamon. Or add a few tablespoons of grated coconut to the sugar mixture. If you're feeling a little more adventurous, you can add a pinch of chili to your roasted almonds.
Ingredients for 300g:
- 300g almonds
- 200g sugar
- 100 ml water
- ½ tsp cinnamon
- 1 pack vanilla sugar
Here's how:
1. Mix water, cinnamon, sugar and vanilla sugar in a small saucepan, bring to the boil and heat to around 120 °C. Using a digital kitchen thermometer (here on Amazon*) you can keep an eye on the temperature at all times.
2. When the mixture begins to form thicker bubbles, remove the pot from the heat and add the almonds. Mix everything well with a wooden spoon until a matte sugar crust has formed around each nut.
Many people make the mistake of stopping at this point in the recipe. The almonds are now sugared, but not as caramelized as at the Christmas market. There's another step missing!
3. Then put the almonds in a slightly larger pot or a coated pan where they have a little more space.and heats it again.To ensure nothing sticks to the bottom of the pot or pan, you have to stir constantly! Now your muscle strength is needed - because it can take several minutes until the dull sugar crust has melted and the nuts caramelize properly.
4. The almonds should not get too brown. As soon as they have the color you want, place them on a baking tray lined with baking paper. Speed is key! Pull the roasted almonds apart with a fork or spoon so that they don't all stick together.
5. After the almonds have cooled thoroughly, you can snack on them yourself or give them away nicely packaged. Everyone is happy about a homemade treat like from the Christmas market.
Tipp:Oh dear, has a stubborn caramel crust formed in your pots or pans? Don't worry, it can be easily removed with a trick. Simply add some water to the pot and let it boil briefly. The sugar will dissolve again and the pot or pan can be easily wiped out.
Make roasted almonds in the oven or microwave
Don't feel like stirring for a long time on the stove? Then you can also make roasted almonds yourself in the microwave or oven.
For the microwave version, mix all the ingredients together in a microwave-safe bowl and put them in for 2 minutes at 600 watts. Stir the mixture briefly and put it in the microwave again for 2 minutes. Complete!
Roasted almonds in the oven are just as easy to make, they just take a little longer. Mix all the ingredients together here too. The only difference: Add a stiffly beaten egg white to the almond-sugar mixture before spreading it on a baking tray. Now cook the whole thing in the oven at 120 °C for an hour. Stir the almonds occasionally so that they become crispy on all sides.
