For me, a sunken strawberry cake immediately brings back memories of sunny afternoons in the garden surrounded by family and friends. The smell of freshly baked strawberries wafting from the kitchen and the smiles on faces when the first bite is taken – these are true summer moments!

Not only is this cake a feast for the senses, but it's also incredibly easy to make. The fresh, sweet strawberries sink into the loose dough when baking and give it a juicy freshness that is simply irresistible. Whether for afternoon coffee, as a dessert at a barbecue or simply because you want to treat yourself - this strawberry cake is guaranteed to bring joy to the table.

Sunken Strawberry Cake: Easy Recipe

Ingredients for a cake:

  • 4 eggs (size M)
  • 100g sugar
  • 1 pack vanilla sugar
  • 100 ml sunflower oil
  • 1 pinch of salt
  • 220 g Flour
  • 1 Pck. Vanillepuddingpulver
  • 1 tsp baking powder
  • 400 g fresh strawberries

And this is how it works:

1. First line a springform pan (26 cm diameter) with baking paper. Preheat the oven to 180 degrees top/bottom heat.

2. Die, dry and remove the greens. Then cut the fruit in half.

3. Mix flour, baking powder and pudding powder. Separate the eggs and beat the whites with a pinch of salt until stiff. Beat the oil, egg yolks, sugar and vanilla sugar until fluffy. Fold the egg white into the egg-sugar mixture. Then carefully add the flour mixture and fold in.

4. Pour the dough into the springform pan and smooth it out. Spread the strawberries on top. Bake the cake in the preheated oven for about 45 minutes. After about 30 minutes, cover the top with aluminum foil so that it doesn't get too dark.

5. Use the chopstick to test whether the cake is cooked. If no dough remains sticking when you insert a wooden skewer, it is ready. Allow the strawberry cake to cool in the tin and dust with powdered sugar to serve.
