The vegetables can be harvested as early as June if the plants were grown in the greenhouse at the beginning of the year. Otherwise it depends on the sowing and planting time. The perfect time to harvest is as soon as the head has reached the desired size, is nice and firm and has not yet opened. Separate the cabbages from the stalk with a sharp knife. They should be placed in a water bath to remove any critters such as centipedes and caterpillars that may be present.
