Ingredients for the soil:

  • 130 grams of butter cookies
  • 60 grams butter, melted
  • 1 tbsp vanilla extract

Cheesecake filling:

  • 500 grams of full fat fresh cheese, soft
  • 100 Gramm Mascarpone
  • 100 grams of powdered sugar
  • 300 grams double cream
  • The grated bowl of 1 orange

Orange jelly:

  • 4 sheet gelatin
  • 250 ml Prosecco
  • 80 ml Aperol
  • 120 ml orange juice, freshly pressed
  • 1 tablespoon of powdered sugar

Preparation:

  • Line a springform pan with a diameter of 20 cm with baking paper.
  • Shoot butter biscuits in the mixer and mix in a bowl with butter and vanilla extract.
  • Put the mixture in the springform pan and press firmly with a spoon. Place in the fridge for 30 minutes.
  • For the filling of cream cheese, mascarpone and powdered sugar, stir with the hand mixer for 2-3 minutes.
  • Add the cream and orange peel and beat stiff for another 3-3 minutes.
  • Spread the filling on the floor and place in the fridge.
  • For the jelly, cover the gelatin leaves in a bowl with cold water and put aside.
  • Heat 50 ml Prosecco in a small saucepan over low heat and add the sugar.
  • Simmer for 3-4 minutes with occasionally stirring stirring and remove from the stove.
  • Press the gelatin leaves, add to the Prosecco syrup and stir well.
  • Add the aperol and orange juice, stir and put in the fridge for 45 minutes.
  • Stir with a whisk and add the remaining Prosecco.
  • Brush the cheesecake with the jelly and put it in the fridge for 4 hours.
