Seasonal recipe idea: Bake apple tart with caramelized walnuts in cream

If you fancy an apple pie with walnuts, we would like to recommend a variant that is a little more unusual than the classic. A tart with caramel walnuts is incredibly delicious and perfect for using seasonal produce. You must have felt like it, right?

Our recipe for apple tart with caramelized walnuts may sound complicated at first, but it is actually quick and easy to make. Anyone who has mastered the art of making shortcrust pastry is guaranteed to have no problems.

A notice:The filling with apples and caramel walnut cream also works well with a regular sponge cake or another type of dough.

In addition to the ingredients, you also need a tart baking pan with the characteristic, fluted edge. But you can also use any other round baking pan if you don't have one on hand, provided the diameter is at least approximately correct. A simple shortcrust pastry is suitable as the doughFilling you can use applesand use walnuts from the garden.

For the dough:

  • 85g sugar
  • 175g cold butter, cut into cubes
  • 1 egg yolk
  • 1 pinch of salt
  • 1 TL Vanilleextrakt
  • 1 pinch of lemon zest
  • 300 g Flour
  • 4 apples

For the apple filling with caramelized walnuts:

  • 150 g walnuts, chopped
  • 50 ml whipped cream
  • 50 g sugar (or 40 g honey)
  • 50 g Butter

This is how you prepare the shortcrust pastry

  • Mix the cold butter roughly with the sugar.
  • Add the egg yolk, vanilla, salt and grated lemon peel and stir everything well.
  • Now knead the dough well with the flour.
  • Form a ball and flatten it on a plate.
  • Cover the dough and chill for 1 hour. In the meantime you can prepare the apples and filling.
  • Peel and core the apples. Cut three apple wedges from each quarter.
    A notice:Untreated apples from the garden in particular quickly turn brown when they come into contact with the air. You can avoid this by drizzling the pieces with lemon juice.

Pre-bake the apple pie

  • Preheat the oven to 180 degrees.
  • Grease the tart pan.
  • Take the dough out of the fridge and knead it again.
  • Using a rolling pin, roll it out into a round shape (about 5 mm thick) and place it in the mold. Also form an edge.
  • Then arrange the apple pieces in circular rows on the dough. Start at the edge and work your way toward the center.
  • Pre-bake 20 minutes.

Cook the walnut filling and finish baking

Shortly before the end of the baking time, cook the caramel walnuts:

  • In a small saucepan, heat the sugar and butter in the whipped cream, stirring constantly.
  • Stir until the sugar is dissolved.
  • Then add the walnuts straight away.
  • After stirring briefly, take the pot off the stove and let everything cool down a little.
  • Take the tart base out of the oven and spread the walnut cream over the apple pie.
  • Bake for another 25 minutes, until the filling is set and the edge of the crust has turned golden brown.
  • Allow the apple tart with caramelized walnuts to cool slightly before removing it from the mold so that the walnut cream can firm up a little.
