Tarte flambée with figs, goat cheese and caramelized onions (including ideas for varying the ingredients)

Puff pastry, figs and caramelized onions - doesn't that just sound wonderful? This version of a tarte flambée is perfect for anyone who loves sweet and savory dishes and doesn't want to invest a lot of time in the preparation.

If you have just bought or received a lot of fruit and are wondering what to do with them, tarte flambée with figs and goat cheese is just the right idea. It is variable in terms of ingredients and is prepared very quickly thanks to the ready-made puff pastry. But be careful: there is a risk of addiction!

For two round tarte flambées with figs:

  • 1 package of puff pastry (it should contain two pieces)
  • 100 g Crème fraîche
  • 1 red onion or 2 red shallots
  • 20 g Butter
  • 2 tbsp brown sugar
  • 2 EL Balsamicoessig
  • 100 g goat cheese (preferably soft cheese)
  • pepper and salt
  • 5 figs
  • Thyme, preferably fresh and chopped
  • any thinly sliced ​​raw ham, e.g. B. Prosciutto
  • 1-2 egg yolks for brushing

Prepare the tarte flambée with figs

Preheat the oven to 220 degrees and line round shapes with baking paper.

  • Melt the butter in a pan.
  • Meanwhile, peel the onion and cut it into rings.
  • Add the onion rings to the pan along with the sugar.
  • Fry until the sugar has completely dissolved.
  • Deglaze with the balsamic vinegar (red wine is also suitable, see below) and continue cooking for 5 to 10 minutes. Set the caramel onions aside.
  • Roll out the puff pastry and place it in the molds. Cut off the excess part.
  • Spread the dough with the crème fraîche (50 g each).
  • Distribute the caramel onions.
  • Cut the cheese into small pieces and spread it over the dough in the same way. Depending on the consistency of the cheese, you may be able to crumble it directly over the top.
  • Season with pepper and salt.
  • Brush the edges of the dough with the beaten egg yolk.
  • Now bake the puff pastry for 10 minutes on the lowest rack (first one form, then the other).
  • Meanwhile, cut the fruit into slices.
  • Top the pre-baked tarte flambée with the figs and season with the chopped thyme.
  • Bake for another 10 minutes or until dough and cheese begin to turn golden brown.
  • After the baking time, top the tarte flambées with ham (optional).

  • Of course, the tarte flambée does not have to be round according to tradition. Puff pastry is sold in a rectangular shape and can be used as is. In this case, just use a regular baking sheet for baking.
  • Goat cheese is just one option. In fact, other types of cheese also taste wonderful in combination with figs. These include sheep's cheese, feta for a milder taste and also blue cheese.
  • You could also replace or supplement the crème fraîche with Camembert, as in the picture above.
  • The thyme can also be replaced with rosemary if you prefer a stronger aroma.
  • You can also replace the balsamic vinegar by using the same amount of red wine.
