Avocado Lemon Pasta – Creamy and delicious last minute recipe
The avocado lemon pastais not heavy on the stomach(as long as you don't overdo it with the quantity) and is therefore suitable for any time of day and year. Plus, it's really incredibly easy to prepare, so even beginners or people who don't really like cooking can try it.
For the pasta with avocado sauce you need these ingredients
Pasta with avocado sounds wonderful. And this is what you need:
- 300 g beautiful Pasta (e.g. Cannelloni, Penne or Spaghetti)
- 2 cloves of garlic
- 1 ripe avocado
- 1-2 handfuls of baby arugula
- Juice of one lemon
- 50 ml olive oil
- 1 teaspoon kosher salt
- ½ TL Pfeffer
- fresh parsley or chives, chopped
How to prepare the creamy avocado lemon pasta
- Boil the selected pasta in salted water. The correct time depends on the type of pasta. Therefore, follow the instructions on the packaging.
- Meanwhile, chop the garlic or use a blender for this purpose.
- Halve and seed the avocado. Remove the pulp and put it in the blender too. Alternatively, you can mash them with a potato masher.
- Add arugula, lemon juice, olive oil, pepper and salt.
- Puree until you get a smooth avocado sauce. If necessary, season with pepper and salt.
- Drain the finished pasta.
- Serve the Avocado Lemon Pasta warm and topped with parsley or chives.
The recipe is easy to vary
If you ever feel like something fruitier, feel free toofresh cherry tomatoesor add dried tomatoes. Corn or a bit of bacon for a non-vegan version are also possible. If the sauce isn't creamy enough for you, you can refine it with cooking cream. In this case, you may need to adjust the seasoning a little and taste the finished dish.
