Ingredients for 5-6 glasses:

  • 2 kg fresh tomatoes, roughly diced
  • 200 grams of onions, finely chopped
  • 3 cloves of garlic, finely chopped
  • Fresh herbs such as oregano, basil, thyme and rosemary, chopped finely
  • 60 ml olive oil
  • Chili (optional)
  • Salt and pepper

Preparation:

  • Heat olive oil in a large pot over medium heat and sauté onions for 3-4 minutes.
  • Add the garlic and chili and sauté for 1 minute.
  • Add tomatoes and herbs and bring to a boil.
  • Reduce heat and simmer for 2 hours until the tomato sauce has reduced by half. Stir every now and then.

  • 4-5 large, ripe tomatoes (about 500 grams)
  • 1 red onion, finely chopped
