Ingredients for 12 servings:
- 200 grams of almond flour
- 2 medium avocados
- 3 Owner
- 120 grams of coconut cream, from a can
- 40 grams of cocoa powder
- 55 Gramm Pulver-Erythrit
- 120 ml almond milk, unsweetened
- 1 THE Backpulver
- 1 TL Vanilleextrakt
Low carb chocolate frosting:
- 1 medium avocado
- 55 grams of low carb chocolate or dark chocolate with at least 85% cocoa content
- 80 Gramm Pulver-Erythrit
- 3-4 tbsp almond milk
- 10 grams of cocoa powder
Preparation:
- Preheat the oven to 180 degrees and line a 22 centimeter diameter baking pan with baking paper.
- To make the cake, mash the avocados with a fork.
- Add the avocados to the blender with the eggs, coconut cream, cocoa powder, almond milk and vanilla extract and blend until smooth, 2-3 minutes, until there are no lumps.
- Place the mixture in a large bowl and mix with almond flour, powdered erythritol and baking powder to form a smooth dough.
- Pour the batter into the baking pan and bake for 30-35 minutes. Allow to cool completely.
- In the meantime, prepare the low carb chocolate icing. To do this, melt the dark chocolate in a water bath or in the microwave.
- Add the avocado, cocoa powder, powdered erythritol and almond milk to the blender and puree until smooth.
