  • 1 ½ tbsp lemon juice
  • 1 tsp maple syrup
  • ½ TL Senfpulver
  • 1 tbsp chopped spring onion
  • 1 pinch of sea salt

Prepare salad and dressing

Preheat the oven to 220 degrees. In a bowl, toss the quince wedges with a tablespoon of olive oil and a tablespoon of maple syrup. Then spread them on a tray and bake in the oven for 15 to 20 minutes (until the edges start to brown slightly), turning once halfway through. Remove them from the oven and set them aside to cool.

Clean the Brussels sprouts, cut it into very thin slices and, in the same bowl, toss it with half a tablespoon of olive oil, a teaspoon of maple syrup and a pinch of salt. Collect fallen leaves and save them for later. Roast the Brussels sprouts in the oven for 20 minutes, turning them halfway through. Then add the collected leaves too.

  • 1 kg roast beef
  • Cinnamon
  • 1 EL Senf

  • 1 onion, finely diced
  • 1 small pumpkin, peeled and seeded, cut into cubes

Quince with meat - recipes to cook: This is how it's done:

Half an hour before cooking, take the meat out of the fridge and set it aside. Preheat the oven to 180 degrees. Place the pumpkin cubes in a pan, fill with water and cook the vegetables until tender.

Sauté the onion in a pan with a lid and then add some water. Heat some butter in a pan. You then have to fry the quinces in it for a few minutes. Add the onion to the quince, continue frying for a while and then add some water to the vegetables. Cover with the lid and let everything simmer for another 20 minutes. If you also want to prepare potatoes with the quinces, you can now peel them, dice them and spread them on a baking tray, drizzle them with olive oil, salt and pepper and then bake them in the oven for 20 minutes until they are soft.

Season the roast beefwith salt, pepper and cinnamon and then brush the outside with the mustard. Now fry the meat in a suitable pan in olive oil on all sides for a few minutes. Then transfer the meat to an ovenproof dish and roast it for about 20 minutes. The exact time depends on your oven and the thickness of the meat. You can use a meat thermometer to check whether the roast beef is cooked: the inside should have reached a temperature of 53 degrees. Remove the meat from the oven, transfer it to a serving plate and wrap it with aluminum foil to let it rest for 10 minutes.

Drain the pumpkin pieces, puree them and season the puree with a pinch of cinnamon, pepper and salt and a dollop of cream. Serve a dollop of pumpkin puree with a slice of roast beef and top with some quince wedges and potatoes.

Quinces in the oven

  • 700 g quinces
  • 1 lemon
  • 300 ml water
  • 100 g Honey
  • 80g sugar

Bake the quinces!

Preheat the oven to 150 degrees. Using a potato peeler, cut three strips of lemon peel and heat them together with the water, honey and sugar until the sugar is dissolved. Wash off the fuzz, quarter the quinces and rub the cut sides with lemon juice to prevent them from turning brown. Remove the core and spread the quarters on a baking tray, then drizzle them with the prepared syrup. Place baking paper over it and cover the tray with aluminum foil.

Bake for 3 hours, remove the foil and pour syrup over the fruit. Increase the temperature to 180 degrees and bake for another 20 minutes to allow the syrup to thicken.

Quince compote recipes

  • 200g sugar
  • 950 ml water
  • 3 quinces
  • grated peel of an orange
  • 2 cinnamon sticks
  • 3 Sternanise
  • 1 sprig of rosemary
  • optionally 2 tbsp hibiscus leaves for coloring and cream and pistachios for garnish

Bring the water to the boil in a pot and dissolve the sugar in it. In the meantime, wash off the fuzz and halve the quinces. Do not remove the core casing. Add the quince halves to the boiling sugar water along with the orange peel, cinnamon sticks, star anisees and rosemary sprig (plus hibiscus if using). Cook for an hour until the fruit is soft but not mushy.

Prepare quince puree

Quince puree is a perfect basic ingredient for preparing various other dishes and desserts. You can prepare it in larger quantities and store it in jars so that you can use it straight away when needed. There are different quince puree recipes. We present you one of the best recipes with quinces:

  • 1 to 1.2 kg of quinces
  • 200 ml water
  • 100g sugar
  • 1 Zimtstange
  • 1 vanilla bean
  • 2 tbsp lemon juice
  • 1 EL Ceylon-Zimtpulver

Recipes with quinces – preparing the puree

Rub the fuzz on the quince peel with a cloth, then wash and peel them. This works quite well with a potato peeler. Then quarter and core them like apples and dice them. Put the water, lemon juice, sugar and cinnamon stick in a pot, scrape out the vanilla pulp and add the pulp and pod to the pot too. Now stir in the quince pieces and bring everything to the boil briefly. Then cover and simmer on low for 15 to 20 minutes. Remove the cinnamon stick and vanilla pod, puree the quince and liquid and stir in the cinnamon powder. Cook the puree for 3 more minutes and pour into clean, sterilized screw-top jars.

Wash the quinces, brushing off the fuzz with a brush. After quartering them, remove the core, but not the shell. Cut the quarters into pieces, put them in a pot and add enough water to just cover the fruit pieces. Bring the water to a boil and then turn the stove to low heat. Now let the whole thing simmer, covered, for about 5 hours, stirring occasionally. During this time the juice turns reddish.

Hang up a kitchen towel and pour the liquid through it into a container (e.g. a measuring cup to find out the amount straight away). A clear liquid remains. Press the fruit to connectnotas this would cause the liquid to become cloudy. Discard the fruit pieces. Put the measured liquid back into the pot together with the lemon juice and preserving sugar. The correct amount of preserving sugar can be found in the package instructions (in the example 500 g preserving sugar for 700 ml juice). You can increase the amount of liquid by adding orange juice. Cook the mixture until bubbly for 3 minutes.

If you make quince jelly yourself, you can use an ice-cold plate to check whether it is ready. To do this, put a spoonful of the liquid on the plate and let it cool down. If it solidifies, the jelly is ready and you can pour it into the jars, close them and let them cool upside down.

  • 1 quince, peeled, cored and thinly sliced
  • 1 tbsp lemon juice
  • 3 medium eggs
  • 100 g cane sugar
  • 120 g Mandelmehl
  • 80 g Polenta
  • grated zest and juice of one orange
  • 120 g natural yogurt
  • 1 ½ tsp baking powder
  • 1 tablespoon almond slivers

Recipes with quinces for cakes – the preparation

Preheat the oven to 175 degrees and grease a springform pan (20 ∅) with butter. Place the quince in a bowl, cover with water and add the lemon juice. Set them aside. In another bowl, mix the eggs with the cane sugar until the mixture turns a pale yellow color. While stirring, add the almond flour, then the orange zest and juice, polenta, yogurt and baking powder and spread the finished dough into the baking pan. Drain the quinces and top the dough with them. Press the fruit a little into the dough.

Bake the cake for 30 minutes, then cover with aluminum foil and continue baking for about 20 minutes until the cake is done (check with a toothpick). Then let it cool for 30 minutes before garnishing with the almond slivers.
