Recipe for crispy cauliflower bites from the oven

Beautifully crispy and incredibly tasty – our cauliflower balls from the oven are a healthier version of the beloved potato pancakes and are ideal for a light appetizer or side dish.

Ingredients:

  • 1 medium-sized head of cauliflower
  • 2 Owner
  • 50 grams of cream cheese
  • 230 grams of breadcrumbs or ground oat flakes
  • 120 grams of Parmesan, grated
  • 1 teaspoon paprika powder
  • Salt and pepper to taste

Preparation:

  • Divide the cauliflower into florets and sauté for 7-8 minutes until soft.
  • Strain through a sieve and squeeze out excess water.
  • Place the cauliflower in a blender and puree until smooth.
  • Add the cream cheese and parmesan and mix briefly. Season with salt and pepper.
  • Form the mixture into 24 balls and place in the refrigerator for at least 2 hours.
  • Preheat the oven to 180 degrees and line a baking tray with baking paper.
  • Brush the balls with the beaten eggs and then roll them in the breadcrumbs.
  • Bake for 25-30 minutes until golden brown.
  • Garnish with fresh parsley and voilà – your cauliflower balls are ready from the oven!

Low carb cauliflower mozzarella balls

Are you on a low-carb diet and are you starting to get tired of only eating meat and eggs every day? Then you should try our crispy cauliflower mozzarella balls today!

Ingredients:

  • 1 medium-sized head of cauliflower
  • 2 egg yolks
  • 240 Grams Mozzarella
  • 120 Gramm Parmesan
  • 30 grams of cream cheese
  • 2 tbsp olive oil
  • 1/2 teaspoon each dried basil and oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste

Low Carb Panade:

  • 50 grams of almond flour
  • 50 grams of Parmesan, grated
  • 1/2 teaspoon each of turmeric and paprika powder
  • Salt and pepper

Preparation:

  • Preheat the oven to 200 degrees and line a large baking tray with baking paper.
  • Place cauliflower in the blender and chop until you get a rice-like consistency.
  • Heat the olive oil in a large skillet over medium heat and fry the cauliflower rice for 2-3 minutes, stirring constantly.
  • Add spices and cook for another 4-5 minutes.
  • Place the cooked cauliflower rice in a medium bowl.
  • Add the parmesan, mozzarella and cream cheese and mix everything well.
  • Place the mixture in the refrigerator for 15-20 minutes.
  • In the meantime, whisk the ingredients for the low-carb breading in a bowl.
  • Add the egg yolks to the cauliflower mixture and mix well.
  • With wet hands, form 20 balls and roll them in the breading.
  • Bake for 20-25 minutes until golden brown.
  • Serve the cauliflower cheese balls with marinara sauce or as a side dish and enjoy!

  • 600 grams of cauliflower
  • 230 grams of cooked rice
  • 140 grams of oat flour or ground oat flakes
  • 1 teaspoon paprika powder

For the dough:

  • 40 grams of wheat flour
  • 60 ml almond milk
  • 1 tsp baking powder
  • 1 tsp olive oil

Preparation:

  • Divide the cauliflower into florets and sauté for 4-5 minutes until soft.
  • Drain well.
  • Place the cooled cauliflower in a blender and chop.
  • Mix the rice and oat flour well in a large bowl.
  • Add the remaining ingredients and work everything into a smooth dough.

  • Add the remaining ingredients except the eggs to the blender and mix until smooth.
  • Mix the mixture in a bowl with the eggs to form a smooth dough.
  • Place in the fridge for 5 minutes and form 25 small balls.
  • Bake for 30-35 minutes until golden brown.
  • Meanwhile, add the ingredients for the tahini sauce to the blender and blend until smooth.
