2. Grate the cooked potatoes into a medium bowl (use the side with large holes). Mix gently with potato starch, garlic powder and 1 teaspoon salt. Form the mixture into approximately 24 cubes (2.5 cm) or 12 cylinders.
3. Lightly coat the air fryer basket with cooking spray. Place half of the cubes (about 12) in a single layer in the basket and spray with cooking spray. Bake at 200°C for 12 to 14 minutes until lightly browned. Turn the cubes over halfway through the cooking time. Remove from the frying basket and sprinkle with a pinch of salt. Repeat the process with the remaining cubes and salt. Serve immediately with ketchup.
A notice:
Spraying the sweet potato cubes with cooking spray helps with browning and crisping, although they still won't brown evenly in the air fryer.
