Everyone has their own preference when it comes to dessert. Some like it super sweet and creamy, others prefer chocolate, others light and fruity. For everyone, however, it generally applies that it comes last to crown the menu, even though you want to start with it straight away. The eye eats with you and no other food obeys this rule like dessert. It should look seductive and therefore – wonderfully prepared. And it works very easily, even without baking. A dessert in a glassserved looks visually more attractive because you can see all the layers and all the ingredients, so it also seems more complicated. However, the preparation is much easier. There is no risk that one or the other cream will become too liquid and therefore unable to maintain the desired shape. The procedure is much easier because you can distribute all the ingredients evenly in portions. The cake base sometimes becomes crumbly and brittle, falls apart, and the cream cannot be applied evenly - disaster. Simply arrange everything in layers in a narrow shot glass, in a rum tumbler or in a chic cognac glass and it will come across completely different.
Professional chefs say: 'The presentation of the dishes is more than half the battle.' In this sense, a dish that is easy to prepare could look remarkable when presented and served creatively and in new ways. Atypical containers and dishes make the contents inside look special and attract attention. On the other hand, this has a psychological influence on the perception of the person eating - people pay more attention to the taste. Why can residual stocks of old dishes also be used?
Traditional recipes for cakes with cream can also be offered in this form and no baking is required. The cake base can easily be replaced with crushed biscuits and cookies. It should be mentioned that a little more cream is required than in the conventional recipe. This means the cooling time takes longer. Dessert in a glass with chocolate
Ingredients for 6 servings:
- 250 g Mascarpone
- 250 g low-fat quark
- 1 ripe pomegranate
- 4 EL Granatapfelsirup
- 14 tbsp orange juice
- 2 tbsp lemon juice
- 50g sugar
- 1 pk. vanilla sugar
- Chocolate cookies or muffins depending on 6-12 pieces for 6 servings
- Mix the mascarpone, quark, sugar, vanilla sugar, lemon and half of the orange juice until you get a smooth cream, then let it cool.
- Open the pomegranate and mix the seeds with pomegranate syrup. Crush the chocolate cookies or muffins or cut them into slices - depending on the size and shape of the glass for serving, then drizzle with the remaining orange juice.
- Arrange the mascrapone quark cream, pomegranate seeds and chocolate crumbs in alternating layers. Leave in the fridge for at least 3 hours or overnight.
with strawberries, yoghurt and quark
Ingredients for 4 servings:
- 150 g Yoghurt
- 250 g low-fat quark
- 400g strawberries
- 6 tbsp powdered sugar
- 1 tsp lime zest
- 4 tsp lime juice
- Clean the strawberries and cut them into thin slices, then drizzle with half the lime juice and powdered sugar and let them steep.
- Beat the cream yoghurt, low-fat quark, the remaining amount of powdered sugar, lime juice and the grated lime peel by hand.
- Layer the cream and strawberries in the glasses.
Mascarpone, raspberries and amarettini
Ingredients for 6 servings:
- 250 g Mascarpone
- 100 g Yoghurt
- 2 tbsp milk
- Juice of 1/2 lemon
- 2 tbsp sugar
- 1 vanilla bean
- 400g frozen (or not) raspberries
- 4-5 tbsp raspberry jam
- 200 g Amarettini
- In a bowl, mix well the mascarpone, yogurt, milk, lemon juice, sugar and vanilla bean pulp.
- Add the jam to the raspberries and heat in a saucepan. Roughly chop the amarettini.
- Pour into the glasses, not too early before serving, otherwise the layers will run like this, layer the raspberry mixture, cream and amaretti crumbs as follows.
Raspberries and quark
Ingredients for 4 servings:
- 250 g low-fat quark
- 250 g whipped cream
- 300 g raspberries
- 60 g white chocolate, roughly chopped
- 2 tbsp sugar
- 1 pk. vanilla sugar
- Beat the whipped cream until stiff. Mix the low-fat quark with the sugar. Wash the raspberries.
- Make a raspberry sauce from half of the raspberries, about 150 g - strain through a fine sieve with a tablespoon and mix with the remaining raspberries.
- Layer the whipped cream, quark and raspberries alternately with the chocolate.
Ingredients for 4 servings:
- 600g apples
- 100g sugar
- 2 tsp cinnamon
- 250 g Mascarpone
- 250 g low-fat quark
- 5 ladyfingers
- Peel and dice the apples, then bring to the boil with 50 ml of water, half the cinnamon and the sugar. After simmering for 6-8 minutes, drain very well in a sieve and then cool.
- Mix the mascarpone, low-fat quark, sugar and cinnamon by hand to form a smooth mixture. Crumble ladyfingers.
- Pour applesauce, ladyfingers and mascarpone curd cream into the glasses in layers in this order. Chill overnight.
with mango
Ingredients for 4 servings:
- 300 g low-fat yogurt (Greek style)
- 1 ripe mango
- 5 tbsp sugar
- 1 Prise gemahlener Cardamom
- 3 tbsp lime juice
- Remove the flesh of the ripe mang and dice it. Then puree with the lime juice and 3 tablespoons of sugar.
- Mix low-fat yogurt with the remaining sugar, cardamom and half of the mango puree. Layer the created cream and puree in the glasses.
